CHARCUT is run by co-chefs John Jackson and Connie DeSousa, who you might recognize from her appearances on Top Chef Canada, Top Chef All Stars and, most recently, as a judge for the Food Network’s Fire Masters. Together, they are two of Canada’s most celebrated chefs. CHARCUT is celebrating its 10th year as a true food and beverage destination in Calgary. It is a meat-centric paradise with a custom-built rotisserie, smoker and char-broiler, featuring amazing cuts of Alberta beef and whole rotisserie chickens. Ingredients are sourced from small, local farmers, ranchers and artisan producers, minimizing the miles food travels while supporting local.
I ordered the sirloin steak and done to my liking. It was good, but I enjoyed the scallops crudo more. The fried mozzarella was amazing. The whipped cheese that went with the warmed tomatoes was also great. I also ordered the stuffed pasta. The atmosphere was good, too, and the service was top-notch. The one thing that stood out were the portion sizes. They were small when compared to the value. I would say two appetizers per person to start with. The plating was sub-par, very plain. Overall all, I enjoyed my experience.
service are nice, and the pasta is the hammock which is fantastic, but the other foods have a room of improvement.
We eat here fairly frequently because we live in the Le Germain but the food, the hostesses and atmosphere is bomb. Just had the stuffed cheese rotola, and as a pasta lover, it was like my mouth died and went to heaven.
We went here for a get together with a small party and while the atmosphere was nice, we were waiting about an hour and a half for our food. Furthermore, the server forgot 2 of our orders and by the time we got our food, we no longer wanted the missed items since we waited so long. One of the dishes ordered but not received was actually suggested by the server. Our server also mentioned how it would be difficult to split our bill however we were a small party so this was honestly just puzzling in terms of the service. I would also like to add that this was on a Monday night which was not busy. In terms of the food quality. The food was good but in my opinion not worth the 38 dollar premium. I got the pasta with bone marrow and found it very greasy. While it did have a nice flavour, the price did not match the quality of the food. Waiting an hour and a half for food may have honestly impacted my perception of the food quality. Overall it would be very hard for me to go back to this location of CHARCUT. In the past I would come for lunch and found the food really good with the quality matching the price perfectly. But tonight I would have preferred any of the better restaurants along Steven ave. I can’t say I would recommend this location based on my experience but I hope they improve the quality of their service. Others have also mentioned positive experience so maybe mine was a rare experience, bear this in mind when considering to eat here.
Top drawer restaurant with interesting takes on Italian and Portugese foods. Serving sizes weren't a shareable size in the "family style servings" version, it was too small for price when family version shouldnt leave people hungry after just a small taste. We had 5 people in our party. But very tasty none the less. Bone marrow, truffle poutine, caesar salad and mushrooms were incredible .The 32oz rib eye which 4 of us split was perfection. Overall a great do again experience.
Our first ever visit to Charcut did not disappoint! The atmosphere was electric, inviting and friendly. The table could have been bigger (but, genuinely that's the ONLY vaguely negative thing I have to say about our experience at this establishment). Service was prompt, helpful, knowledgeable and informative (Johnny, was charming). Unexpected, and impressive though, was, an informal chat with owner/chef, Connie whose genuine interest in us as customers blew us away - she chatted about stuff on the menu (without upselling) and made us feel so welcome and valued -moments after she left us, a couple of glasses of bubbly arrived as a welcome gift from her - followed by a lovely friendly chat with Ty the floor manager, who knew who we were....had details about us already (from Connie) making us feel extremely valued and welcomed (not too much schmoozing ) , just a professional courtesy beautifully executed. Then the food arrived. Well, if we didn't feel good about the place by then, the food sealed the deal! Warm, blistered vine tomatoes on a bed of whipped cheese with in house charred focaccia were mind blowing -followed by grilled Bransino in a lemon sauce which was transcendent and a Margherita Pizza which was pure heaven. It was perfect mom and daughter meal - Charcut can have our date night money from now on! I was beyond impressed by the entire experience.
The food was incredible! Such a nice cut of steak, and it's the first poutine I've ever had that had layers of cheese, not just a few curds on top. Our host didn't seem too enthusiastic about waiting our table but cestlavie. We're not there to make friends. There is also 20% automatic gratuity added to the bill, which was kind of annoying seeing as the waiter wasn't the greatest, so be aware of this.
Great meal from beginning to end. The cocktails were excellent and our server, Andrea, was really lovely, attentive and funny. The serving sizes were good and I had probably one of the best desserts (chocolate budino) I’ve ever eaten - and I never like dessert.
We recently dined at Charcut University , and from start to finish, the experience was nothing short of exceptional. First, the food: every dish was a masterpiece. The ingredients were fresh, and the flavors were perfectly balanced, showcasing the chef s expertise. From the Feature board (homemade mortadella and truffle honey AMAZING) each bite was a testament to the restaurant s commitment to quality and taste. The prime rib. Pepperoni pizza and Bucatini Carbonara was cooked to perfection. The staff deserve a special mention. They were not only attentive but also incredibly knowledgeable about the menu, offering insightful recommendations and answering questions with ease. Their genuine warmth and professionalism elevated the experience. Thank you Daniel! The ambience was just right elegant yet comfortable, with lighting and decor that made the space feel inviting without being overwhelming. Whether you re there for a romantic dinner or a casual meal with friends or family, it feels like the perfect setting. What truly set this visit apart, however, was the attention to detail from the management team. Seeing the managers personally engaging with guests, checking on tables, and ensuring everyone was having a great time spoke volumes about their dedication. It added a personal touch that many establishments overlook. If you re looking for a dining experience where exceptional food meets outstanding service in a beautiful setting, look no further than Charcut University, I ll definitely be back!

The food is always amazing, but vegetarians need not apply. It doesnt completely lack greens, but my favorite dish is duck fat roasted brussel sprouts - they melt in your mouth - so be forewarned.
At university district location for quick sandwich lunch. I ve always enjoyed the all at once express lunch at downtown location. The uni district is a new location, atmosphere lovely, modern decor and comfy. Yet food was lacking/ average, butternut squash soup was SALTY, both hubby and I added lots water for it to be drinkable, mentioned this to server who basically said it s made in a big pot what can the chef do - lol Less salt?! The turkey sandwich was good, but it s 1/2 size it was before and made me missed the cranberry sauce, fries were not fresh and on dry side, the chocolate cookies were good. Doesn t make me want to go back to this location again, they charge premium but don t really care about product. Oh and hubby could not get a regular coffee for lunch, as per waiter has to be ordered to go like out the door.
I know this will sound petty, but for a higher end restaurant, I just expected better. The decor needs attention it gives an aged feeling and not in a good way. The chairs are worn out, and when you sit in them, you feel the wood through the cushions, making it an uncomfortable experience if you spend an extended time there. The clothing of the wait staff just didnt fit with a higher end restaurant. The steaks were ordered by the ounce, and their solution is to cut the steak thin if you are ordering anything under 10 ounces. I just expected better.
Had breakfast and dinner here and both times they were either slow or not able to just bring us the bill to charge to our room. Lots of apologies on being backed but it took away from the experience of their food.

Thursday I was taking my friend for lunch. We are both in wheelchairs. We may look like we dont have a lot of money but we both are owners of our own businesses. Theres no handicap door button to press to open the door so we asked the lady standing behind the counter if we could come in. She said yes and then this odd look on her face is she had no idea how to speak to us. Talk to us or fit us in. I guess the screen tells you how to talk to guests. It got very crowded. One of the guests was talking to us asking us if youre going to have a good time downtown because we were talking about going to the museum. Then manager came and he did the same thing. Looked in the screen like we were something out of this world. These are two men and wheelchairs. Nothing else. We thank you for showing us how you run your business. I can remember looking at your opening monologue in the business magazine that youre making a place for everybody to go and enjoy a great steak and great service. Wow, youve come a long way. You should be so proud of yourself because when you only limit to certain people certain clientele, the limits to what people could enjoy. We went to the restaurant around the and had a great meal. It was really great. They opened the door for us. They treated us like we were human. Sad because Ill be walking soon and will never come to you. Restaurant never hold my business meetings there. Never old a business retreat or a business Christmas party with you. Wow! Great service. The manager should be fired because if hes doing speaking for you but says but not very much but I give you five stars. Never would I give you five stars for inviting restaurant? No I guess I have to be walking to get that kind of rating. The manager wouldnt even open the door for us so we could get out. We had to ask a customer. Its just a sad

This place came highly recommended. We were excited to go on a spetacular culinary journey. The server was quaint and expanded on our options for the evening. When the food was served, my first thought was that presentation isnt always everything. After taking my first anticipated mouthwatering bite, I sadly thought that we could have just gone across the street to Ruths Chris.
Service was good, location was great and atmosphere was really nice. Unfortunately with many steak houses in the area, the food was sadly pretty underwhelming. It was disappointing in portions and flavor.
A lot of noise in the place, the dishes took a while to arrive. We ordered a sandwich and a chop, but they werent spectacular. The cookies were delicious. The place fills up at lunch time!

Its a nice place. The food was pretty good, I would say a solid 3.75, but Im gonna give them the 4 stars, as the prices are reasonable. The biggest complaint is the chairs. They are horrible. To use the back rest, you would need to lean back like a gangster. This resulted in alot of slouching and feeling uncomfortable. Plus they sunk in the middle like a couch with worn out springs. Overall its a nice place for a date or a business meeting.

Went there for lunch today (had reservation) with our work team, would not recommend lunch there unfortunately. The good: waitress was very professional, the greeter was also very nice and treated us well. The bad: food was ordered at 1215 and was served at 1 pm, the orders were simply sandwich, soup and fries (5 people) so not sure why the 45 mins wait, the food was extremely expensive, and no justification was offered for the delay along with no updates. We can certainly tolerate 20-30 mins wait time for food but 40 mins + for lunch is tough to observe for such a simple order. Certainly was expecting better food quality and faster service for the higher price tag. Looks like charcut management needs to put in some structural improvements in my opinion.

I recently visited Charcut Roast House in Calgary on a weekend with a couple friends and the place was pretty empty, which makes sense after the service we received. The waitress who served us wasnt warm or friendly from the start. She asked if we had a reservation, even though the restaurant was pretty empty during peak dinner hour. Then proceed to say nevermid I think we can fit you in . When she asked for our IDs, we handed them over without issue. However, she told my friend, who is 25 and waiting for her new license, that her interim ID wasnt valid even though it wasn t expired. We asked her to explain and all she said was I can t legally serve you then pointed at me and added he looks fresh 18 and probably just grew a beard to make himself look older so we need to check everyone s ID. Im 28. We decided to leave, and all three of us said we would go somewhere else, to which she replied, Good luck finding a bar that will serve you. Ironically, we were served at all three bars we went to after leaving Charcut. At the end she told us we are being rude for asking her to explain the rule or law to which she responded with I m leaving and not talking to you about this anymore and took the menus and left. We spoke to the manager about our experience, but he was indifferent and clearly didnt care much about our concerns. There are always two sides to a story, so I encourage you to read other reviews before deciding to visit. This was just our unfortunate experience.
The atmosphere,the service and the food was epic.. Everything there is freshly made..it was delicious..please go and try it out. You won t regret it it s located at the University District.. Children welcome .. Loved it

Autograt of 20% seemed to have significantly slowed down service. Got there at 1145 with reservations and food didnt come until nearly an hour later, when we were clearly there for a business lunch. Felt like we were a lower priority because of the auto gratuity to our group. Food and service have gone downhill. Fries were not hot. Wont be back.

Seems like a go to spot for work lunches. Their daily specials makes the selection so easy, but portions are very inconsistent. The sandwich I had was half the size as my colleagues and I wouldnt have been full if it wasnt for the fries and soup....and I typically eat less than the average person. Lunch service is always busy but service was also very slow.

Service was amazing, so friendly and attentive. But the food was just ok. We thought given the praise in magazines and TV that we would be wowed. The brioche bread was similar to what i had at montanas once and desperately needed a sauce or something. The prime rib was on level with the keg, it lacked seasoning and the demi was lack luster, the potatoes were delicious but some were under cooked. My husband had a bone marrow pasta, it was very one note, I actually gave him my grilled lemon and that improved the taste dramatically. Pasta was delicious though, perfectly cooked. The atmosphere screamed hotel bar, I thought this was fine dining from all the reviews, the chair backs sink so far backwards its uncomfortable and there are plastic plants everywhere. I was super excited, but for the price it was very disappointing.
High-end restaurant with exceptional service, great selection of meals and appetizers, and fantastic food.
Goodness, went for a birthday dinner and was not disappointed in the new menu whatsoever. Between the two of us we experienced the fired mozzarella, albacore crudo, prime rib (of course), bone marrow boscaiola, some strawberry/rhubarb dessert, the salted caramel crunch, and a few drinks. Everything was absolutely delicious. The comments were constant and absoltno sharing till a bite at dessert. Our server Andrea was brand new and full of character, professionalism, and honesty about not being 100% on the menu yet, but would find answers if we had questions. She asked for feedback on the menu so she could relay information to future customers and was just a solid good time. We were then checked in by a manager, I believe to see what we thought of the new items and offered some bubbly. Which we didnt take, but was super appreciated! This place honestly never disappoints.
It is a great girls night in an elevated atmosphere with a buzz. We started with a bottle of the Pelassa Mario s Bianco - 2018. This wine is a triple blend and is an easy drink; it will pair perfectly with just about everything on the menu. We shared a few delightful dishes: *Shaved Salted Zucchini Salad - the dressing is light flavourful, with a subtle hint of mint. *Crispy Pork Belly - small crispy nuggets, seasoned perfectly, with the best dip with a slight spice *Fried Mozzarella - crispy breading with a perfectly spiced sugo. Cutting into this, the mozzarella pull was drool-worthy! *Funghi Pizza - the whipped fresh cheese was perfection with the wild mushrooms. And if you are a crust lover, this one is thick but light and perfectly crisp! Our server was engaging, keeping our glasses full and knowledgeable of the wine and food offerings. If you want somewhere to relax and enjoy great food and service, make this your next night out!
We were pretty excited to try out this restaurant. Their menu looked great! We asked our server to help us build a charcuterie board and she recommended getting the premade platter so that s what we got. I thought for $46 and 2-4 people serving we would get some pretty choice cuts of cured meats and cheeses. Instead what we got was shaved pecorino romano, 2 small slices of soft cow cheese, a tiny portion of cured salami and basically deli ham. The bulk of the platter was taken up by pickled carrots and olives. No side of bread or crackers. They didn t even tell us that we should order the bread separately. I can t believe we had to scoop shaved (essentially) Parmesan on our forks and eat it. This was an indication of what s to come for our smoked prime rib to share and a side of asparagus. Asparagus had been burnt to a crisp. The smoked prime rib is definitely not smoked and absolutely needed the jus as well as the dill horseradish sauce. On its own it s basically a store bought steak. Even if they offer to give us a free dinner I still wouldn t go back there. Look, if this was a pub or something I wouldn t care but I really hate spending over $150 on mediocre food.

Ive never been served a pasta dish without the pasta! The bone marrow stragonoff came out without the actual pasta. We wanted to ask but our server didnt come back for a long time so we didnt get a chance to ask and werent offered an explanation. Our waiter was quite uninformed regarding the menu, however he was a new hire and therefore understandable. Even still, he wasnt very friendly which wasnt appreciated. While the restaurant itself is beautiful and in a great location, the service was a bit awkward. The steak was fine, albeit a little cold, but was well-seasoned.

This is the BEST place for date night in YYC. The location is great, the food is incredible, and the atmosphere is amazing! I came for Valentine s Day and had incredible service from Erika. And Vincenza the manager went above and beyond to ensure we had the best valentines dinner ever! Thank you so much for the amazing evening
Charcut: 1/5 . I m not typically one to publicly criticize restaurants as I understand that bad publicity can be detrimental to a business. However, given the cache of this restaurant and the expense, I feel this is warranted. My sister, mom and I were having a staycation at the Fairmont Palliser and so decided to have a nice dinner here. Sadly, that is not what was received. We ordered the beet salad, stroganoff, bone marrow, and steak. Service was fairly good, a bit quirky and not a lot of communication regarding the timing of our experience or general info. Beet Salad- alright but seriously lacking seasoning and very unimaginative both in presentation and delivery: Roasted bone marrow: tough, not silky or decadent but tasted like an old tough sinew with one decent bite. Stroganoff- devoid of seasoning, imagination, or any really good preparation. Steak- chewy, unseasoned and sauces lacking flavour. When explained to server that nothing really hit the mark at all, and was lacking overall taste and texture, (we gave back the whole steak and it was inedible) she was understanding about it, but not overly helpful. There was no manager visit to the table, just a $50 thrown in our direction and no bill comps. I don t complain to get food comps but it seemed like she thought she was doing us all a big favour for it when we did not plan on returning. Was informed chefs were at the flames game and so the backups were working which is probably the problem. Our bill was $280 and for that I expect a decent calibre meal not some pile of unseasoned inedible food. All 3 of us have been experiencing gastrointestinal issues since then as well. So disappointed I might as well use the $50 Gift card as a coaster at home as I have no intention of returning. Absolutely brutal.
Upon arriving without a reservation we were informed we had to vacate our table in an hour and forty minutes. Not a problem............??? One hour after we were seated our server informed us that there was a mix up in the kitchen and our order didnt print (out of paper he said) but our appetizers made it to us in a timely manner. We were served our meal sometime later but had to rush in order to not make the next patrons wait. The bone marrow appetizer was fine. The pan seared Mediterranean branzino fish was out of this world. An absolutely wonderful meal. Note the picture. The bone marrow stroganoff had too much red wine in it and was very over powering. The pasta wasnt separated so we had numerous thick uncooked pieces. We thought because of the incredible amount of time we waited to be served, we would get a discount or complimentary dessert. This wasnt the case, I was reprimanded for holding my credit card in my hand rather than leaving it on the table for the server to notice. Perhaps you should have clued in when we stated we were finished eating, wanted the bill and had our coats on..............waiting once again, patiently. Unfortunately, we will not return.
Food is really good, plating was amazing (as seen in the photo). The Brussels sprouts side was especially amazing if you are a veggie lover. Pricing was decent in comparison to where we came from. Our server was also really friendly and he knows his menu! He made really good recommendations for steak options. We had affogato for dessert and it was very yummy. The only thing is: DO NOT USE THEIR COAT RACK. I lost my Canada Goose jacket and my Saio & Kyo beanie from their coat check, which makes this dining experience a couple thousand dollars more expensive. It especially sucked as it was -2 degrees out and I was left in a short sleeve. The restaurant and hotel staff were trying to look through security footage but no camera was facing the coat rack. They offered to hang your coat at the door but they didn t really watch them... (We had a really early dinner and there were probably 4 or 5 coats in total and they lost my coat..) They covered our food bill in the end but I d rather have my coat back :( the restaurant jotted down my police report info and said they would assist the process, which was nice of them. Everyone says sorry for what happened but.. I really wish I never dined here. Didn t think I would lose a coat at a steakhouse in a hotel in city center. Food is great though, just watch your belongings. P.S. There was no extra coat on the rack so it was definitely stolen not taken by mistake. Plus my coat was in a rare color.
Its not a bad place at all. Its probably one of the few times in Canada that I could taste the meat. Awesome. I was a bit frustrated with the Picanha, which was good, but not cooked as a South American picanha. The other meat options were well made, too. Recommended. Vegetarian options: Not much options. You can have veg food, but the experience certainly is not the same.
The first Bring Your Own Bread (BYOB) in town! We went there for the buffet breakfast 3 days as we stayed at Le Germain hotel. Unpleasant waiters, quite rude (why bothering with a Good morning at 8am, right?) looking like they wanting to chat between themselves instead of attending tables. Buffet quality was quite okay, except that no bread at all was here for cold meat, butter or jam. We asked once for it, and we were told croissants would do... We asked twice for it and our waiter reluctantly brought us a few toasts, omitting to tell us she would charge it later to our room. Probably she was expecting we spread butter and jam on our fingers and we would lick them! This is this kind of place and people. Very mean. The third breakfast was cancelled, as the restaurant was closed. Indeed, no warning, no signage, nothing. Manager replaced it with an in-room service. Croissants and cold meat were probably one or two days old, for sure. If you stay at Le Germain and avail breakfast, be very careful as it could ruin the whole experience.
Huge quality decline and poor service. Ordered the $120 prime rib dinner for two for a birthday meal at home - it was advertised on Skip the Dishes as coming with a caesar salad, vegetables, and a dessert. For $120, they only sent a piece of meat and a dry, inedible piece of hard bread. It took an hour for the assistant manager to call and offer a refund - which was a pathetic $15 off the order in Skip the Dishes credits. $105 for a piece of just-okay prime rib and ruining our evening. Terrible, shortsighted service that lost them two frequent customers permanently. Much better value and service at other local steakhouses like Hys and Vintage.
Came here for New Years Eve dinner with a party of 8. The server was nice and friendly, but the service was okay. She only filled our water once and we had to track her down a couple times for additional refills. She did bring by plates and forks as we had brought a cake for a friends birthday which was great, but again we had to go upto her for a knife. It always puts a sour taste in my mouth when auto gratuity is included for larger parties, but you barely get attention from the server because they know the tip is there no matter what. Being New Years Eve she mightve been busy which is understandable. But I saw her a few times at the back bar chatting with coworkers, which again is fine but if you have multiple large tables then it would seem best practice to visit them more often. Personally, the food was less than mediocre. I got the bone marrow stragonoff and was not a fan, just tasted off and was really heavy. My wife for the spaghetti cacio and it tasted bland, no taste whatsoever. For a place that charges above average for their food, the food should taste much better. Better to spend your money elsewhere in my opinion, only reason we came here was because some of our friends raved about the poutine, which was again mediocre. Barely any cheese or gravy on there.

Very disappointed in our dinner. We were a group of 6 for a business meeting. We ordered old fashions with a specific bourbon, they didn t have what we wanted, and rather than letting us know, they substituted for something else (in their defence they did give us new drinks). Service was extremely slow, chairs were terribly uncomfortable and worn out to the point that you couldn t even lean back in the chair. We had to flag down our waitress to order our mains, and again to order a wine for dinner. We brought a group from out of country for a nice dinner, and we found ourselves apologizing for the restaurant we chose. I m not sure we would return
Food took an hour to get after ordering, food was sub standard at best, and the server who was an older guy with a french accent was awful. Save your money and time and pass on this place.
Food was very sub-par for the price of everything. Bone marrow escargot was very small, the truffle poutine had no hint of truffle, and the lamb was very gamey and lacked flavor. Server did an amazing job though. She was knowledgeable of the menu if you had any questions. Ive heard their lunch is good so I may come back to try.
I was finally able to experience this restaurant as it has been on my list for a while, and it was definitely worth it. The atmosphere was cozy and inviting, and the service was friendly, and impeccable. My friend and I decided to share multiple appetizers to really get a feel for many of the different flavors being offered, and each one held its own amazing experience. We also each had one of the signature cocktails off the menu. They were expertly crafted and really added to the overall experience of the evening. This was truly a top-notch experience, and one for the books. I cannot wait to come back and try more items on the menu.
Overall extremely disappointed in my visit. Waited about an hour for my steak to come out after ordering medium rare. It came out full blue rare and tasted awful. I had it sent back to be cooked properly and it still came back rare. Just the smell of the steak was revolting. It tasted horrible so I sent it back along with 3 of my friends who ordered the same dish. Didn t get any apologies for the situation and was not offered any solutions so decided to just not eat there. Bill came out over $120 and all I had was a cold poutine that showed up an hour after being ordered. Also an automatic 20% gratuity was added on the bill which was nice because it was the worst service I have ever had and the most overpriced undercooked steak in the history of Calgary. If you are planning to have a nice night out at a high end restaurant I would rethink your options instead of coming here.
This was my second time dining at Charcut. The first time it was exceptional, this time it was very underwhelming. I made a reservation for 12:45 a month prior to our arrival on December 16th which was confirmed. We got there and our table wasnt ready. Understandable, it was the Christmas rush. They advised us we could go wait in the bar in the hotel which we did (interesting side note - at no time did anyone in the bar come to see if we wanted to order anything). Finally, 30 minutes later we asked about our table as we had appointments at the spa at the Hyatt at 2:15. We finally got our table. The server was not great. She was unfriendly and it seemed like we were bothering her. She took our drinks order and left. The drinks took forever (and they werent that complicated) so we finally had to flag the server down to order our lunch as we were on a tight timeline (given the 30 minute delay to get our table). Instead of taking individual orders, she stood at the foot of the table having those at the far end yell down their order. As soon as she left the person beside me turned to me and said what do you bet they get my order wrong. Turns out she was right.....they didnt get her order right. Had the server bothered to come to our end of the table she would have heard the order correctly. By way of food, I ordered the burger. Typically I only order burgers at steak houses because they tend to grind their own beef and normally they are flavourful and juicy. The one I got looked like a pre-pressed frozen patty. It had no flavour and was overcooked and dry. It was hit and miss around the table in terms of flavour and quality. Perhaps it was an off-day given the holiday season and I will give them another shot given that my first experience was fantastic. At this point however I would recommend their sister restaurant, Charbar over this one.
Came here on New Year s Eve and had the worst steak ever, had to send it back, it tasted extremely gamey and came out blue rare even after sending it back. The truffle pasta is $40 and tasted like pasta water. Really disappointed.

Came here tonight with my boyfriend. Christian and Erica were both awesome. We sat in the lounge and the food came super slow and without these awesome servers, this would have been a 1 star experience as per the wait times. Thank you both for going above and beyond as well as taking the customer service experience to another level of amazing.
The food was very poor. Lacked in taste, almost like they didnt want to risk. We chose to go with the Valentines dinner, the salad was average, we asked for no feta cheese and it came with feta cheese, we asked for the tortellini to be well done as my pregnant wife shouldnt eat raw egg and it came raw. The rib stake was half fat and was lacking taste and the Tiramisu was average, Ive made better Tiramisus at home. Very disappointing for spending 200$ on a dinner.
Overall I think that we enjoyed all of the dishes, which included Lamb Shank, Roasted Chicken, Steak with Verde Sauce, Brussel Sprouts, Parmesan Fries, wine and martinis. The one dish that we were not that pleased about was the steak, which was definitely a little bit tougher to eat than we would have liked. I suppose the more tender cuts would be much more expensive. We received very good service, which I would expect at a restaurant with this high of a price point.
I was looking forward to trying this restaurant, but ended up having the worst dining experience Ive had in years. Our server was great and was trying his best, but the food took so long 90+ minutes after ordering to come out. By the time we got it all our food was cold, I found a hair on my steak, they added an extra entrée we did not order onto our bill that was not noticed until after we had payed, and the food made my stomach extremely sick. Will not be going back.

Hello, I felt that the quality to value ratio has suffered at Charcut. To be charged an additional $5 for a salad substitution is one thing (still too much) but to have the salad come in a tiny premade bowl where the Caesar dressing consists of a bacon & breadcrumb mulch ( rather than actual croutons and bacon) and was really not good, made me write this review. It s not right, I ended up paying just shy of $40 for a burger (it was decent, not great) including a beer and tip (15%, the service was decent) is just a bit much. The seating was also second rate (in the bar, with regular blast of cold air whenever the door was opened) but I have not included that in my review as it was a very cold day and a busy lunch hour yes, I had made reservations. Regrettably, I don t think I ll be back any time soon.
The hostess took a super long time to notice I had walked in and seat me (longer than 5 minutes to see me), but Im guessing she was busy doing other stuff, it happens, but I almost walked out. My server was amazing. Sorry I dont remember your name, but it was a younger guy with a beard. He made the whole thing. When I got there it was dead, almost no customers. He chatted a touch and gave me recommendations, even went to check with the kitchen if they could get my prime rib blue or not. By the time I left, they were slammed, but he still took the time to check on how I liked my desert and see if I needed another drink, etc. The food was really good, but not good enough that I didnt think it was overpriced. For a beer, 8oz prime rib, sprouts and dessert it was $105 (well $85, be he deserved the $20 tip). I knew it wasnt going to be cheap, before I went in, and yes, I read the prices and knew what I was in for when I ordered. Its not that the food wasnt awesome, I just feel it was a touch overpriced. If my bill had been $60 for the same thing, Id go back often. At the price it was..... Itll be a super special occasion place. Then again, maybe thats what they are going for. Tl;dr: good food, but expensive for what you get.
The lunch sandwich special truly can t be beat! Always an amazing set of soup, fries, greens and the best sandwich (and great portions). With two chocolate chip cookies (cooked in bacon fat if I remember correctly ). Heaven.

Really enjoyed the prime rib supper we had here. The meal we had was part of the YYC Eats events and it was a featured prime rib meal, with half a charcuterie board to start and maritozzi banana cream stuffed sweet brioche with powdered sugar for dessert. For our choice of side, we had the poutine. This was a massive amount of food for 2 portions and all prepared well. We ordered the meat medium rare and thats exactly how it arrived. It also came with a clove of roasted garlic, rosemary jus and horseradish aioli. The dessert was beautifully prepared and delicious. For my drink I ordered the Marasca Spritz, which was lovely and refreshing. It was garnished with lime and brandied cherries. Our server was attentive and polite. He attended to a couple of special requests without missing a beat. He also kept our water glasses full throughout the meal without being asked. The food and drinks arrived in a timely manner and the pacing of the meal was spot on. This is an excellent place for a special occasion or even just a nice supper out.
Food was mediocre. Orders were messed up. Service was slow. Credit card machines didn t work so had to pay in the lobby & to cap it all off, they automatically add a 20% tip. When we inquired about it, we were told management policy but doesn t say anything about this on the website. Very disappointing. My lunch group will not be going back.
Everything was undercooked - steak came out blue rare when ordered medium rare, potatoes were raw, bone marrow was cold and drinks took a really long time, close to 20 minutes for an old fashioned.

My Fiancé and I had the great pleasure of eating here. Our server, Phoenix, was incredible. He was extremely knowledgeable, attentive and friendly without being too overbearing. The food was on another level! I can honestly say Ive never had a better meal. We will absolutely be returning.
Charcut has the best butternut squash pasta. The dish is truly unique and has a profile of flavors that is perfectly balanced. I am only giving 4 stars because they lack some consistency in the kitchen and put more sauce then is needed on most of the dishes. Wonderful downtown spot for a drink or a good meal. The menu is well rounded and has options for a light bite or a big plate meal. The cheese selection is top notch and provides great flavors. The ceaser salad was quite lemon forward but one of the best I have had. We also had the prime rib which was tender and delish. With so many steak/meat forward locations downtown, Charcut is worth a visit and has its own twist.

I m feeling generous so I ll give it 2 stars. It wasn t horrible. But it wasn t good either. For the price you would definitely expect better food. The flavour was extraordinarily dull. We ordered potatoes that came in what I think was a Greek dip? Not sure because I couldn t taste it. Even when I only tried the dip by itself. It had less flavour than plain sour cream. The lamb was alright. Not horrible, but not good either. Maybe other places have set my standards too high, but this was one of the worst orders of lamb I ve had, again still not terrible, but also not good. The person I went with had prime rib, and while I can t comment on the taste it looked like only one side was cooked, the other was raw (or so it looked). At the end of the day I have no plans to eat here again, and wouldn t recommend it either.
Was here May 25 2023. I chose this restaurant because I had seen on social media that this was a top rated place. The waitress was very busy talking to the sous chef and never brought the appetizers we ordered. The entrees took an unreasonably long time to come given the few number of diners. The food was just okay, nothing exceptional. I will be giving the competition a try the next time I am in Calgary
Was anticipating this place, brought our staff and all 5 of us were extremely disappointed with the service and two of the three were disappointed with the food. You do expect that the meat would come out to desired internal temperture. Sides were underwhelming and very poor value for the expense. I would forgive some aspects of the service if I was not in view of the kitchen and was witness to the huddling of staff members not doing their jobs, in a not busy restaurant.
Came in for their lunch special and it was delicious! Loved the variety you get with the soup, sandwich, fries, homemade pickle, and even cookies! One of the best lunches Ive had in a while. Service was also very friendly, attentive, and quick. Will definitely be back!

Lunch was nothing special. I ordered the soup of the day & sandwich of the day. Other items might be better not sure, but no one was wowed. Also our server kept messing up our orders, and although I feel for him as we all have had bad days, but honestly it did impact our experience.
We had dinner here last night. Ordered 8oz prime rib. It was the toughest meat I have ever had. They gave us the equivalent of a butter knife to cut it. I asked for a steak knife and they said the non serrated knives we were given were all they had. I would never go back nor would I recommend it for anyone looking for a good steak dinner.

Went for Fathers Brunch with the family. Food took a long time and service was just average. No steak knife for the steak and eggs was odd and didnt see the waitress until after I was done eating. Not the same experience as the last time I went for a work lunch. But Ill give it another shot.
Food was good ordered the pulled free range chicken sandwich. Came with Parmesan fries that were too parmesaned but sandwich was good though not exceptional but good.

Food was delicious, however, $39 for a small steak and it came with no substantial side. I ordered the butcher shop steak and the salad was pretty dull. A few greens placed on top of the steak and thin sliced carrot and radish. I left still hungry. Asked for no Parmesan and I believe my server who is from Moncton requested that as well, but it was brought out to me like that and I had to pick it off.
The house draft Negroni by Eau Claire Distillery was worth the visit.
The price is absolutely rediculous for what you get. Roast beef was chewy and had dull almost butter knives to cut it with. Never was so disappointed . Our party could not finish half of it. The meat was very underwhelming in taste. I have had much much better meat at a 1/4 of the price The place was empty on a weekend night which is pretty telling. Lower the price , improve the taste and the place will fill up. Seems like it used to be good in the past. I cannot speak for how it was as it was our first time.
Unfortunately we had a bad service, I don t like personally onions and I specifically asked our waitress if there any onions on the dish I want, and she said NO, only garlic and I said ok I will order the crab chili linguine the dish has a lot of onions and I said I don t want this, because has onions the manager comes and said we can give you another dish but we will not take this dish from your bill what wait? I couldn t believe what I just heard I asked the waitress why should I paid for something that I will not eat the Manager said sorry but because is not an allergy is just a preference, but I asked and the waitress said NO, terrible service, never coming back. We asked for a bowl with water for our dog and she said they don t have it another bad service is too bad to said, but definitely bad service all the way.

We went there after spending the whole day at the Calgary Stampede last weekend. I ordered the smoked dry-aged prime rib and it was one of the best steaks Ive had. Service was good even though they were super busy.
The tenderloin was really good, but everything else (brocolli, asparagus, potatoes, prime rib) was somewhere between bad and average.

Tonight, I died and went to heaven. This was hands down the BEST dining experience of my life. The food was literal perfection. The entire meal left us salivating, the salted caramel Budino was the yummiest desert Ive had in YEARS. Out waitress Erica, and bartender Pheonix provided top tier service. Hands down some of the best weve experienced here in Calgary. This is our 3 or 4th time visiting in the last 10 years, and I cant believe we waited so long to come back. If you are looking for a top notch dining experience, Charcut needs to be on your list.
Sandwich is good but the soup is so so
Popped in to enjoy the lunch special yesterday with a friend. The sandwich and cookies were good. Soup and fries just okay. However what was absolutely terrible was the service. No water or coffee refills. In what is supposed to be a quick lunch so you can head back to work we actually had to physically walk around the entire restaurant and front hostess stand to find anyone (not even our server) to print our bill. The lack of service was possibly the worst Ive experienced in Calgary. There were 6 tables seated with 3 servers so I sincerely dont understand where the wait staff was. I do not recommend at all if you want a lunch here between meetings.

The food was quite good, we did get a fine tomato salad, which came with seared tuna. The tuna tasted a little fishy to us, but that was the only complaint. We also ordered the half rotisserie chicken, the pizza, blistered, pro Valletta, and the fries. Everything was so delicious and tasty. Our server was a little clunky. There were a few opportunities that were missed in terms of service.
Service and atmosphere were great. Food was not good enough to justify the prices. Prime rib was thin.
Update 8/2023: I dined here again for lunch, and am surprised that they no longer have a menu for non alcoholic drinks. My server was pretty aggressive that they dont have one and I can ask her for all the items they have. However she didnt even know what teas they have, so maybe a menu is a good idea. Anyway, I told her to feedback to management that a menu for non alcoholic drinks would be nice and she told me that they didnt need one. Hopefully management will see this and get the message that she clearly didnt want to pass upwards. Every other experience: Charcut is by far my fave lunch spot downtown. The prime rib sandwich is the best beef dip I have EVER had. I wont entertain any other menu item. Prices are spot on for lunch and so amazing. The grainy mustard gives a nice texture to the sandwich. I highly recommend lunch at charcut.

Great place to grab lunch. Went in on a Thursday at noon and was easily able to get a table. Everyone at my table ordered the lunch sandwich which is a great deal. The reason for the 4 star is the fact that the sandwich I got was smaller than the others at my table so the only comment would be the lack of consistency. The lunch combo still tastes great though.

I was disappointed with the dishes. All the dishes ordered were unfortunately ordinary.
My husband ordered the prime rib which was tough and stringy and served completely absent of any side. I ordered the Mediterranean Branzino (sea Bass). It was a very small, thin fry filet with some unremarkable polenta as it s base. The worst was we order a gem salad with Caesar dressing and toasted herb bread crumbs. The lettuce was DROWNED in dressing and the herb crumbs over the top. It was HORRIBLE! On top of that the steak knife my husband was given to cut his steak was very dull. We sent back the salad and the manager did come by to apologize and removed the salad from our bill. We ate the other items.. regrettably. We also told her about the dull knife and she apologized and said they had new ones on order . Also, We were seated by the window with a view of the street and 4 cement barricades which was not a great view but the restaurant probably didn t have control of that.

I was really disappointed. The food came out suspiciously quickly, like less than 5 mins after we ordered. It feels like they just reheat the food thats been sitting there in the back. The presentation of the food reminded me of Ponderosa Steak houses from the 80s except I didnt get a Superman poster with my meal. I asked for medium rare and the steak was barely pink. Was overpriced for the quality of food and level of service. Definitely not the fine dinning I thought it was. Its a shame, because I love Charbar.

Ordered Lunch all at once. Daily sandwich being a beef Brisket. It came with soup.. vegetable creamy.. tomato/curry flavor. Parmesan fries and homemade cookies. A bit disappointed as the sandwich bun was a little soggy on the bottom. The beef tasted okay. A little greasy. French fries were great. They even came with homemade in-house ketchup to dip. Cookies are pretty good. Soup not too bad. Matter of ones palette if you like the taste or not. The lunch hour was very busy. The atmosphere was a little loud which would stand to reason the busy lunch crowd. This food experience makes me a bit skeptical to try the dinner menu.
Run. Run! Run!!!!! We went on a weekday night. We waited an hour for our cold steak and cold poutine, the food was NOT GOOD. The orange slice in my drink taste like it was three days old. And it was way too loud to have any kind of conversation.
We came about 5 pm without a reservation and all tables were booked but they went out of their way to find us a seat anyway. We chose to sit at the kitchen bar top so we had a front row seat to the kitchen. It was a bit noisy, as would be expected, but a lovely experience. They gave us extra tasters and we were encouraged to ask questions. All the staff were exceptionally welcoming and made us feel special. Everything we tasted was excellent! I would recommend it.

My fiance and I dined at Charcut while staying at the Le Germain Hotel. Our experience was pretty lackluster. The waiter was a bit snooty, since we came in our gym clothes after a workout, and we felt a bit judged. I dont believe you should judge what someone is wearing when they enter your establishment, unless there is a specific dress code listed. If theyre there in the first place, they can afford to eat :) We also tried flagging our waiter down, but he walked past us a few times and I have a hard time believing that he didnt see us. We ordered the charcuterie meat platter, the bone marrow pasta, and the butcher steak with poutine on the side. The steak was amazing and perfectly cooked. We ordered it rare and Charcut definitely delivered. However, the poutine was a bit bland. I understand its supposed to highlight the truffle flavour, but we did have to ask for a salt shaker. Otherwise, I think the chefs did a great job preparing our meal. While at the hotel, I purchased the breakfast option. I did not expect the charcuterie meats at the breakfast to be the same exact meats from dinner the night before. I was a bit miffed considering I paid $22 for a little plate at dinnertime, but here was the same exact meat at AYCE for less! All in all, I am giving Charcut 3 stars because the food and menu is quite good. However, the service leaves something to be desired.

I was at a conference at the hotel and needed a no-gluten lunch option. Turns out they had a full no-gluten kitchen setup including deep fryer. I got to have fries, first time in a long time. They prepared me a light and custom open faced sandwich lunch with fries. Very tasty and very appreciated. Dietary restrictions: Gluten free options.
It used to such a great place! One of our favorite in Calgary. We were extremely disappointed yesterday to see that this place has such low standards now. Food was terrible and overpriced, poor service. The place was almost empty on Saturday night. Now I understand why. And I give 0 stars to the manager.
If I would be the owner, I would change the management team right away. Its sad to see what this has turned into. You are loosing clients, even very loyal ones, like us.

My review from 4 years ago is below. Fast forward to 2023 and unfortunately this restaurant is no longer recommended. The servings are small and quite overpriced now. The steak was mediocre at best. Unfortunate, however, would appear mgmt has given up. --- old review from 2019 --- This is definitely one of the best restaurants in Calgary. Come on, ...how many steakhouses butcher & cure their own meat. You cant go wrong here!

No complaints about the food. It was actually pretty good. The service however was terrible. The waiter was inattentive and came around once to refill waters but was sure to come and repeatedly ask if we wanted more cocktails. I took my brother here who decided to get his kids leftovers to go, and it was just squished into a box and appears like it went through a salad spinner first (Im kinda joking here, but seriously it was sloppy and lazy). Regarding pricing, like I said the good is good but for two entrees, two sides, two drinks we spent $200. I would argue that the price for the experience is... inflated. Honestly, if youre looking for a good meal downtown youre probably better off just going to the keg or one of the many other steak joints in the area. Kid-friendliness: Nope!

Overall very dissatisfied with the experience, service, and food of this establishment in relation to the price point. the portion sizes or the appetizers were minuscule in comparison to the price and were overall underwhelming. The bone marrow escargot was nearly flavourless and comes with only 4 snails. My moms chicken was completely dry, and my dad s vegetables were completely underdone with his steak. In addition we had to sit in the restaurant for nearly an hour before our first drinks came and well over an hour before our appetizers appeared. The service was kind, but incredibly slow. Overall for the price point of the evening my family and I were very disappointed. I would not dine here again nor would I recommend it to anyone. If you are looking for a good dining experience at a similar price point I would recommend Bonterra Tratoria, you will enjoy your experience much more.
Friendly accommodating staff! Everything was amazing except a couple small points for the food. For a $100 20oz prime rib, wished it had a bit more food in general , charcuterie board didnt have much balance. Wish it had some sort of sweets or cheese.. it was just cold cuts and pickled sides. (Bread was extra charge.. lol) Poutine was a bit dry. Generally, everything was salty. Great restaurant but personally, I think there are better places for value.

I attended a work dinner at Char Cut a few days ago and I felt complied to leave a review based on the outstanding service I received. I have a dairy allergy and it can be tricky attending a meal with a large group when the meal was family style. Our waitress was so wonderful providing me specialized items that were dairy free and also informing me of anything that I need to avoid. It was a wonderful experience and I will for sure be going back!! Dietary restrictions: Dairy Allergy
We started with the Charcuterie board and bone marrow, amazingly delicious. Then 12 oz prime rib, lamb shank and mascarpone polenta was out of this world delicious. Then Chocolate Budino and affagoto gelato was so delicious we forgot to take a picture! The food and drinks were so amazing & we will definitely be back!! I highly recommend this for a great night out.
Good service and the meal wasnt bad at all
One of the worst meals I ve had in the city, for the price. Absolutely no flavour or spice on any of the dishes, we had a fair number of appetizers, pasta and steaks, as well as the prime rib. The prime rib was cold, and the steaks were completely unseasoned. The pasta was totally unseasoned, no salt, the only time it tasted good was dipped in bread, because the bread was the only thing that was salted. The service was also sub-par at best. If you are looking to spoil yourself for a fancy dinner, this is not the place, will never entertain the idea of going again.

Underwhelming at best. Server was consistently hassling us throughout the night to order more even though we stated multiple times that we had ordered enough (a few of us had eaten some small bites elsewhere not too long beforehand). It came off pushy and awkward for everyone at the table by the third or fourth time. He didn t make any other conversation with us besides that. Prime rib was pre-sliced, quite chewy for everyone at the table, no seasoning, cold. Butcher s cut was quite dry. You don t really get any grill or smoke or aged flavour. Sides were tasty. Small thing, but the tables for >2 people are simply pushed together so they aren t level, so the food was awkwardly placed on a slant and wobbling on top of table cracks. Not really a fine dining type of feeling. Bathrooms were a bit dirty too with no paper towels. For the price, you re far better off at Saltlik down the street, Chairman s, Hy s hell, even The Keg. For a higher end occasion, you hope for the experience of something special. I used to love Charcut for their lunches but bringing my family here for a birthday dinner tonight was just embarrassing.

This place is way to expensive. The food was ok. Parking was difficult to find. The service was good. Bottom line. Not worth your time or money. Food
I visited this place for office lunch and ordered sandwich which came with soup. It was just okay and didnt live up to the price or hype.
Service was great, charcuterie very good, mains lacked and were served almost cold. Caesar salad over dressed and soggy. Would not recommend mains, but if charcuterie is what you want good choice.
