Great place to get a tasty breakfast, and excellent coffee. I had a cortado, and rarely do they come quite this good. Grilled cheese: excellent. Scone: also excellent. Chill place, and authentic. Don't be intimidated by the alleyway!
Wonderful place right in downtown Collingwood. Tucked away in an alley, the place has a gorgeous interior with an amazing selection of wine, cocktails and beer. The food and coffee is amazing. I had the Reuben sandwich and it was delicious. This place is open in the morning until midnight. It’s a great breakfast, lunch and evening hangout.

Wife, mother, and seventeen month old daughter enter @3.50pm and told they are okay to sit down and order food. Establishment closes at 4pm. When ready to order, they are advised they will have to chug their chardonnay as they dont have any time before closing. Very unprofessional, bordering on illegal. Very sad experience. Ive been involved in the restaurant industry for over twenty years. If guests enter the dining room to order food, staff stay until they are done eating, thats how things work in a restaurant. Take note please, Gibson and Company. Thank you.
Great little place to have coffee in the early morning
We stopped in a couple times this weekend, once for their excellent coffee and another for a night cap, theyve got a very good collection of bourbon to choose from. Great space and atmosphere, and the staff were really chill and friendly.Well have to come by for the food next time.

A hidden gem down a little alley. The concept is unique - high brow coffees, wines and beers with a small but well apportioned supporting food menu. We were there in the afternoon and the cold brew was the best I ve had. Highly recommend popping in. Vegetarian options: Lots of vegan options
I was able to find a coveted bottle of wine unavailable anywhere else in Ontario. The client service was top notch and delivery was seamless for the most part. I look forward to making the drive up to enjoy their venue. Cheers.
Great coffee bevs Wine selection Food
We had three of the sandwiches and they were delicious. The staff who brought out the food was very warm. However the staff at the front don t seem very happy to be there, I felt bad asking them for anything. The vibe of the cafe was cool but the staff could be more welcoming. The nitro cold brew was quite bitter and I was surprised there was ice in it. Also definitely very tricky to get inside if you have a stroller.
Ordered Gluten Free and they gave us normal bread. Have to ask to get it remade.

This place is so cool and such a great concept. Its hidden down an alleyway and beautifully designed when you step inside. Reasonable prices and their food menu is superb. Awesome place to come to study, read, or relax with loved ones.
This place has always been a must. Super cozy and friendly staff. The AC was busted is the only reason why they get 4 stars. The Golden Girls wallpaper in the bathroom was a wonderful touch.

Honestly never been impressed, been three times and three times service was slow and not friendly. Food is over priced and mediocre ..this place seems to hide behind the wine and cool image of a hip place to hangout and work from , the space is very nice and love the alley entrance but aside From that it is not all the hype. I think it has a lot more potential than what it s offering.
Thoroughly enjoyed coming here. Visited on a Sunday morning with a group of 7 friends and all were able to get seated comfortably. They really know what they are doing when it comes to their drink crafting and the espresso was delicious! I found the pricing to be quite reasonable and the vibes, omg the vibes! Immaculate! The access was down a little alley which I found to be so fun! A definite place to stop in while in Collingwood.

Okay first of all, the alleyway walking inside gives Harry Potter vibes, so magical. The staff is truly amazing, super friendly and they all know how to make an amazing flat white! Huge wine selection, light menu and an assortment of baked goods that change every day or so I married my favourite barista a few years ago, so the staff here better WATCH OUT if they keep up this kind of quality!

They offer a wide selection of spirits fit for any budget, as well as an impressive wine cellar filled with organic/bio-dynamic wines (a tad bit pricier than your standard, run-of-the-mill wines, but you get what you pay for; they stock only the best!) The knowledgeable, friendly staff will help steer you in the right direction, no matter what youre craving. Consistent espresso shots pulled every single time if youre just looking to pop in for a coffee, as well as Small Plates available if youre in the mood for a snack. My favourite hangout in town; always a great crowd! You have to check it out!!
I ve only been here for coffee and pastries so the stars are based on that alone. The place is very cute and staff are fine. The low rating was for the quality. I found the coffee they used to be sour which made the latte taste off. You also couldn t taste any of the vanilla in the latte and they charge extra for flavours so that was disappointing. The Apple fritter was SO dense, there was no way I d be able to eat it all. The half I did eat just sat in a ball in my stomach truthfully.

One of the best parts of vacation was finding this awesome wine/bourbon/coffee shop. Atmosphere and service were excellent. The selection of drinks and food was great. We made this a frequent stop while visiting the area. Look forward to coming back.

I LOVE it here! I come for a tea almost every other day. I sometimes work, I sometimes socialize. The staff is so kind and sweet. They remember me every time I come in. I ve met so many amazing individuals here. I ve talked for hours with strangers that become friends. Everyone talks to everyone. It s such an awesome hidden gem of Collingwood. Can I give this place 7 stars?! The cute lights outside and the alley entranceway are so charming. I had a spiked London fog latte with gin, it was great! My gf had a chocolate latte with Gibsons rye; it was the best coffee drink Ive ever had, I think because of the quality of the coffee and chocolate! Unreal. They have great beers and wines and whiskey. The staff is super friendly and knowledgeable. I will be coming back whenever Im in town.

Love this place. Love the vibe, love the people. Come here a lot and it s awesome for meetings, or hanging out. One thing though: the grilled cheese. K. Because everything at Gibson & co. is so awesome I was thinking, I m gonna order a grilled cheese and I bet it s the greatest grilled cheese I ll ever eat. But then the grilled cheese came, and I was like, dudes it s not a grilled cheese if there s no butter on the outside of the bread, yo! That s cool if you want to make a cheese sandwich and put it in the panini press thing with no butter, but that makes it a dry heated cheese sandwich dawgy! Not a grilled cheese. So that s my only thing. But everything else I LOVE
Excellent coffee
This is one hidden gem in Collingwood. Its a MUST visit if you like your coffees and tea!! But the best part is that they actually have AMAZINGGGGG food. Make sure you try the avocado toast if you are there or the hummus the ambiance is nice and it just feels cozy especially on a brisk wintery night. Definitely check her out!!

And it looks like now (2023) they have really upgraded their options for food and beverages... as now (it may have been like this before, but I dont remember this) they have an incredible variety of wines, and small plate options like Duck Rillete and sour cherry grilled baguettes Wowsa! :)

Their wine selection, great coffee, nice interior, friendly staff, good atmosphere, interesting people and still very affordable. I would definitely recommend it to anyone who is visiting Collingwood and looking for a great place for an evening or even during the day, and actually whenever you want something good.

Ive only ever come here for coffee, but I absolutely love this spot. Love their iced lattes, the overall vibe of the place, and their alleyway entrance lined with lights. This hidden gem is a must try in Collingwood. Lovely team, warm atmosphere and smart concept. Wine was excellent and largely Ontario based. They really seem to support local vendors which is great. Pilot coffee was perfect as usual. Cubano was very tasty. Would 100% return on our next visit.

A coffee and wine gathering place hidden off from the Main Street of Collingwood (Hurontario). Very close to city hall. Nearby street parking. A large sélection of wine which seems to be their forte. I tried the matcha which was fairly good but small portion considering the price of $5.95. The sour dough bread with butter $5 was not overwhelming. Perhaps we can try other dishes the next time and cannot judge it but it was quite busy despite early Saturday morning.

Great spot, from the almost sketchy alleyway entrance to the kitchen fumes catching the afternoon light to the multitude of wine bottles that Id never afford to buy, this is a place that is just about too cool for me. Beer on tap, good coffee with any espresso option youd want, a very cool place to hang out with a multitude of cool good options available.
My boyfriend and I were looking for a chill place to have a few drinks and wind down the night. Gibson & Co not only met what we were looking for, but greatly exceeded our expectations! My boyfriend had Blood Light and the owner took his time to explain the flavours of it and even told us about the Blood Brothers Brewery, which it came from. I wanted a cocktail and noticed that about half of them were made with gin which I normally hate because who wants to drink a Christmas tree?! The owner explained to me that most non-gin drinkers like their gin and he even make me a drink to try and offered to make me a new one if I didn t like it. Well, I ended up loving it! Everything about Gibson and Co was perfection and we will definitely be back! PS. Their soup is amazing too! My mom picked some up for me last winter.

A little piece of distillery district with a Collingwood charm would be the best way to describe this place. The experience starts with the charming alley that leads to the main door. Once inside you can feel the care that was taken with the interior design. The food is local, inventive, and delicous. And of course this review wouldnt be complete without the coffee review. Delicous aswell! I love pilot roasters and the baristas do a wonderful job of preparing each drink. We found out about this place and we went to breakfast and lunch because it was so good. Would highly recommend
This is such a cute little hidden gem. It is a hole in the wall place. It is on a tiny street off the main Street. It has a really cool Vibe and decor. Seemed like most of the people there were locals and knew each other. I would have loved to stay longer but our child was with us so we grabbed a quick bite to eat and a couple of drinks. Service is quick and nice. Wish I took some pics of the charcuterie plate we ordered. Must go place.

We got a ginger and molasses cookie... They are better then Starbucks. Starbucks needs to take a seat because their lattes are to die for. Great atmosphere and was lots of seating. Friendly staff, great selection for coffee, whiskey and their wine-to-go shelf is a gem. The spot itself is beautiful, warm and inviting. Food is limited but the smoked trout sandwich is a personal fav! This place has got it dialed in. Pilot coffee, cool entrance, great charcuterie board, nice vibes and music. Go check it out!

Went here on a whim. It was so cute inside and the food/baked goods were so good. I got the chickpea smash toast and a blueberry muffin. Yum! I will be back when I m in the area.
Smoked fish dip was fantastic, wine and cocktails were great service was slow but it was a busy evening.

Went to a whiskey bar quite excited to have a scotch ... cute alleyway in and fun atmosphere (someone in the kitchen burnt some toast which was also not making the experience top notch) It blows my mind that they are missing the scotch drinkers ... 6 of us went ready to spend a couple of hours drinking and having a few apps ... we ordered on drink and left ... seriously... invest the $500 to have a limited scotch collection ... not hard!
me and my friend came in for a coffee today and the cashier was really unfriendly and seemed annoyed, its too bad because weve had really great previous expeiences here :( coffee was good as always
