My family lives incredibly close to this restaurant and we've been wanting to go for years, but it just never worked out. My brother and I were finally able to visit today and everything exceeded our expectations! We came on a Monday when the shop was completely empty, so we were able to get our food really quickly, and we were very pleased with everything we got. Incredibly fresh and delicious, it was clear that the owner puts a lot of love into the food he cooks! The owner, Nobu, was incredibly kind and welcoming! He was attentive and made our experience top-notch. We will definitely come back again!

This place is a gem and eating here was a very pleasant surprise. The restaurant is a one man show, you eat here for the food and experience. It isn't about eating fast and then leaving. The food is as authentic Japanese as it can be and every dish was crafted carefully by hand. The owner is very cultured and can connect with every guest. The ramen is delicious with many fresh ingredients and the broth is pure. You wouldn't find anywhere else like this in Toronto and I am very glad to have this gem in Mimico. Nobu is a great chef and person and I can't wait to come back again.

We’d been keeping an eye out to see when this spot would re-open, and finally got the chance last week. The menu is small but didn’t disappoint. It wasn’t too bad of a wait (as others have mentioned, it’s a one-man operation) but we went early. Ordered takoyaki and it was excellent - piping hot with sliced onions, sauce and radish. Also a pork ramen, a “veggie” ramen and mango drink. We had a nice chat with the owner who was fun and friendly, and he kindly adjusted the veggie ramen to include veggie dumplings, potato croquettes, lettuce, seaweed, and a delicious fried garlic with oil. I can’t say what the base of the broth is but we left happy and satisfied.

Wonderful gem off the beaten track! Despite coming on a Friday night full of first-timer couples having a date, the food came in quick enough order that I didnt even have to open my book. Was looking forward to this place from the reviews but was sadly disappointed. We ordered the Karage, Takoyaki, croquettes and Ramen (the were out of Spicy miso). Chicken Karage was good but lacked crunchiness and was quite oily. Takoyaki was really good, definitely recommend! Croquettes and Ramen were good too but I ve had better. From ordering, cooking, bill payment it s only 1 person so expect to wait a lot for everything. While placing the order, we did not want drinks but the chef/owner, forced that we must get something to drink emphasizing that they re really good and a Japanese special. Biggest concern was with tipping, he brought out the machine and had his finger at 25% already. And when we decided to pay cash, I stead of giving the exact change, he made up excuses and gave back the change after a 20% tip. To compensate, gave a packet of ramen LOL. We saw him do the same thing with the group before us, where he asked them for a $15 tip (from each bill). It was very awkward! Pretty terrible since the dishes are already priced higher than normal and he just asks/gives himself a tip. Would not go back and do not recommend.

My wife and I visited Nobuya for the second time last weekend. It was quite busy and waited for an hour. The Ramen and Chicken Donburi were the best I ve had in GTA. Tonkotsu Ramen was delicious with complexity and nice layers of flavours. The building is so nice too. Very lovely spot to not rush too if you feel like taking your time. Parking is behind the restaurant.

The food was absolutely delicious. I appreciate that the owner, Nobu, is transparent and upfront about being a little slow as he is both the chef and waiter - a one man show, but we already knew that from reading the reviews. I believe the menu changes everyday (I could be wrong) but tonight the main was tonkotsu ramen with 4 different apps and we chose the croquette, both of which was amazing. The broth tastes homemade which to me, feels authentic. Nobu also goes out of his way to strike a conversation with each customer, genuinely trying to get to know them. As he suggests when you walk in, if you re looking for a quick eat, this may not be the place to be but if you have the time, the food here is worth the wait!

Very disappointed. Its supposed to be a neighborhood, charming, authentically Japanese one man show. But ultimately, its gimmicky if you need to wait 60 min for a bowl of ramen (we were the first customers of the day), you cant even get tap water while you wait, the air con doesnt work properly, and the pork meat is extremely chewy. Yes, other ramen restaurants may be slick and impersonal but it doesnt mean this restaurant is worth your time and money.

I have never eaten here. I would like to comment on the the owner feeling the need to chase after women walking past his restaurant alone at night. He both chased after me and put his hand on my shoulder. It was very aggressive and intimidating, especially as I was alone and it was very late at night. I also could not understand him, but I believe he was trying to get me to come into the restaurant. It was very inappropriate behavior. I can see from other reviews here that he has done the same to others. Please be wary when you pass this restaurant.

Amazing ramen straight from the mainland. A one man show who tries his best and that in itself makes it better than any corporate ramen chain. Will come back again. I came here once when I was a kid after he opened in the first month. My second time here in over 10 years and it is only better as I can remember. A pocket of Tokyo/Shibuya in Toronto A wonderful restaurant where you can enjoy authentic ramen. Its impressive to see him working hard on his own, and his efforts make the ramen even more delicious than those from corporate chains. I definitely want to come again. I went there as a kid the first month it opened, and this is my second visit in over 10 years, and it was even better than I remembered. This review is long overdue, since we came here in 2019. However, 5 years and many restaurants (including a 3 Michelin star in Paris) later, this is still the place my now-fiancé and I reminisce about. I am leaving this review because we were discussing the one place we would return to for a meal if we were able to teleport anywhere, and we both answered with Nobuya. The food and owner both made huge impressions on us that night, and I still compare every ramen to his - and none have ever come close. At this point, I find it quite likely that we will book a trip back to Toronto within our lives, just so that we can return to Nobuya.

Legendary place. Very unique and feels like it would be more likely to exist in a show or movie. Great atmosphere, very creative and passionate chef and host, hockey on TV. They tell you off the bat that its a wait for the food so remember to expect that. The appetizers come out quick though. When we were there we had our full meal in feont of us in 45 minutes. Portion was huge, I was fighting to finish it, but didnt want to leave a morsel.

The food is good. The ramen soup is truly superior. However the meat is poorly done. Its mostly shredded pork with only a few slices of pork still intact. All the attention went into the soup and the toppings/sides are lacking. There is very little meat and no egg considering it is $23 per bowl. The environment is terrible. It was very hot and humid. The Air conditioning and ventilation is very poor. The decor is like a run down bar. The place is a 1 man show where the owner is cook, server and waiter. Although he is friendly, the service is slow due to this. He also pushed very hard on upselling 2x ramen to me and my wife who were not that hungry. My wife felt bad for him and just gave in. He was practically begging for it. It was rather sad. But it s still a sleazy move. The guy seems over worked and stressed. He was yelling and swearing at people who used his washroom. I do agree it was wrong for them to the washroom without making a purchase. But it was very unprofessional for him to be swearing at them full blast in front of customers. It wasnt just a normal expression of displeasure. He was dropping non stop F-Bombs on them and fully lost it. It ruined our dining experience. We were looking for a place thats relaxing with a nice environment. But this place isn t like that. However I do give them credit for making a very rich and complexed ramen broth.

Food: We ordered the ramen and the croquettes which were both quite good. To be picky, the noodles were soft which isnt what I associate with good ramen. Toppings wise, there more to be desired. No roast pork, no egg, not even bamboo shoots. Just shredded pork that is likely pulled from the stock bones. Broth was flavorful and homey, a bit oily and a tad salty. Overall, I think its a good bowl but overpriced at $24 given you can get a superior bowl from sansotei, raijin and others at a similar price. Croquettes were excellent though, no complaints there. Experience: The restaurant itself was hot, ac wasnt running so we sat outside on a small rickety old patio table. Due to lack of staff, we had to open the umbrella ourselves - not a huge deal. When we were checking out, the owner was a little overbearing, asking if its the best ramen, a bit of a loaded question. When tipping, he was holding the payment machine and watching me, which I never experienced and was a bit uncomfortable. Reading other reviews afterwards, seems we had it not so bad with the owner pressuring others to tip higher. Service was slow but wasnt too bad because we came at opening- this seemed to be a common complaint as well. Overall, I care more about the quality of the food than the experience, but even considering food alone which is the strong suit, there are better options at the price point. Its a cute spot, but I dont think Ill be returning.

If I could give this place 10/5 stars I would. Met up with a buddy a half hour before close and the owner literally met me outside and greeted me in. The atmosphere is super cool with a lot of Japanese and Canadian memorabilia. This is the best spot for ramen in Toronto! The broth is rich, the noodles are perfect. Terrible Service! Will not be back. Try - *Shin Ramen and Sushi* on Lakeshore the food is delicious and service is excellent! We walked in the place was completely empty and when we ordered he told us we didnt order enough food. (1 bowl ramen and 8 pcs gyoza for my friend). I kindly explained she wasnt feeling ramen and it was more then enough food for us and he just kept looking at us with this look of disgust on his face expecting us to order more food. When I asked if we should leave he said sure go ahead and leave. Who does this guy think he is? I would never treat customers that way! Empty restaurant. I understand why.

Small family run Ramen joint that hits 10/10. Nobu san is a friendly host and prepares piping hot tasty ramen for all guests. I visited Nobuya three times over two days for selection of appetizers, mains and drinks. We tried the Ramen, Donburi chicken rice, Takoyaki and Karaage for appetizer. I dine with Japanese coworkers very frequently at different restaurants in and Nobuya is one of the top for taste and freshness. First off, this is not a place for a quick meal. This is an establishment where the chef (who is the lone wait staff, I might add) strives to perfect each and evey item youve ordered. The care he takes in crafting these dishes and even down to their overall presentation really shines through. Everything from the croquettes to the very hearty ramen was very delicious and I will definitely be a repeat customer. Great food - this guy is a takoyaki king. His sauces are incredible. Ramen is very decent, but Id recommend going for his apps (kaarage, takoyaki, etc)*. Like everyone else says, its a one man show, so be mentally prepared to wait. For example, we once went when he turned on his lights at 5pm, and got our food at 8pm. However, there are also days/times when there is no one there and is less busy. *Note, that ordering his apps may mean longer wait times. But overall, very glad to have this spot in the neighbourhood!!

DO NOT COME! Its the worst ramen place lve been to in Canada. Food is below average, youre better off eating Ichiran instant ramen or frozen Takoyaki. Service is subpar, you wont have free water. You may be shamed for not ordering ramen. The owner was trying to block our way for tipping under 15%, and no receipt. Theres a prominent smell of wet old rag in the - I though it was a good sign since most good local place in Asia are like that. But no, I got three days of diarrhea for sub par food.

I had this place bookmarked as a must visit/must take friends to try restaurant for some time, due to the reviews. I visited the restaurant recently with a friend for take out, even though I personally cannot eat any of the food due to allergies. The restaurant did not appear too busy - one table and then another arrived while we were there waiting for our order. The owner informed us that there would be a bit of a wait because it is a one person operation and that he has other orders to take care of (perhaps delivery, Im not sure). Appreciated that he was upfront about the wait. We ordered appetizers to go, which were supposed to, not take as long to prepare. We ordered Ramune Japanese Sodas for our wait. The food prices were a little steep, but I was prepared for it as it was a treat. I was not prepared for the owner to take the payment machine from me, cancel my payment when I put no tip for my take out order. He proceeded to tell me that I should tip him like everyone else, suggested an amount and handed the machine back to me. I was so taken aback, I cant even recall exactly what he said. Im embarrassed to admit it, but I very stupidly gave him a tip and now I wish I hadnt. Ive heard of the expression ask and you shall receive but this was not appropriate. He didnt even ask! I know times are tough, prices of everything is high, but he makes a decent profit - otherwise he would not still be in business. My friend said the food tasted good. However this was my first and last visit. How you treat customers matter more than taste. I rarely tip for take out as I am already paying for the food (which includes labour). There was no additional good service. *Not recommended.* Wish I had read the poor reviews ahead of time. Seems like this is something the owner has been doing for some time. Lesson learned. Dietary restrictions: Nothing gluten or dairy free except some sodas. We went to pick up sushi and sashimi from another restaurant afterwards. (This was expected. I knew this place does not serve sushi/sashimi.)

I love Nobuya! It is right at the end of my street and I can t help but stop in when I see the Open sign! Locally owned and operated, so it is only the owner who works there. I see all the complaints about wait times, but all great things are worth the wait, and trust me, the wait here is definitely worth it! Everything is made fresh to order, and it is absolutely delicious. So happy to have this lovely little restaurant at the end of my street!

I have no complaints about the food with the exception of the ramen broth SOMETIMES being far too salty, as if I were to dunk balls of salt into the broth. Gyoza is really good and so is the sauce. I saw another review about food poisoning and I simply dont believe that s true. It takes about 12-24 hours for food poisoning to take effect and the man complaining said 3 days. Eat less carbs bro. My primary complaint is that myself and my guests felt pressured and guilted into leaving a tip and a good google review. I have been to the restaurant one time and when paying at the PoP machine, the owner covered the no-tip option. The owner is very sweet and genuinely cares about his customers but can be very greedy sometimes.

Just had dinner here with my partner and I have to say this place is an absolute gem in the area. we had the Japnese Croquette and 2 Pork Ramen. The Croquettes were perfectly fried and was so wonderful. The Ramen was wonderful , rich and dense. There was no skimping on any ingredients and you could tell it all fresh. Like others have stated it really is a one man show and hes passionate about Nobuya! He was very nice and had some good laughs with us during our visit. Looking forward to our next visit!

Although I was genuinely impressed by the ratings when I found the location on Google, I wont be recommending it to anyone. Although the meal was nice, the service was terrible. Waited over 1.5 hours while the owner wasted time chit-chatting with other people. I have never had such delayed service from anyone before. Even though the food was good, I was still willing to overlook the awful service, but the man insisted that we leave a minimum 15% gratuity. Given that I had to wait a long time and the service wasnt very good, why would I tip you so much? He doesnt even offer water, and everything is so expensive that its not worth the hype, really!

We ve been waiting to go here. It s been sold out many nights or did not work for us. Wow what a treat! Best karaage we ve had and we ve had quite a few, even in the US. The part I want to review about is the service. This is a one man shop who does it all but the owner does a great job of taking care of the customers. I had an opportunity to talk to him about soccer. He is a big soccer fan. I came with a party of 4 which made it difficult to continue our conversation regarding soccer. I wish this store was in my neighborhood so I can drop by when I feel like having some authentic Japanese Ramen and have a chat with the owner. I had been waiting for this spot to open for a while now and it did not disappoint! There is just one man there and he does it all, the cooking, the service - everything. The menu is small but done to perfection. Two mains: ramen and donburi and some apps: gyoza, takoyaki, and chicken Karaage. The ramen cost about $22 and portion was big and very filling. The broth was delicious and the pork was soft and juicy. If you see the sign out front, cancel your dinner plans and stop in for a delicious taste of japan.

I finally had the chance to try Nobuya - it s a one-man-show by Nobu and an absolute gem in Etobicoke - definitely one of the best places to eat ramen and experiences in Toronto. Nobu really takes his time interacting with customers and preparing the food with care. We tried the shoyu ramen, takoyaki, and spicy miso ramen. The shoyu ramen was our favourite by far (refreshing broth, not too salty). No okonokiyaki today since Nobu s waiting on the flour from Japan and refuses to use frozen ingredients, but the takoyaki was a good alternative. Definitely will be back to try more!! Satisfying, crunchy, and flavourful - nothing was overcooked or greasy, so we ate it quite quickly. Thrilled to see Nobuya is up and running again! I came here several years ago and had the best okonomiyaki of my life. Very intimate and authentic atmosphere. The chef is perhaps the most sincere and earnest restaurant owner Ive encountered. The great strength of the restaurant is the diligence and skill of the chef, as such the menu is small and subject to change and you should be prepared to wait for your meal. Embrace this and you will not be disappointed! Japanese appetizers were of exceptional quality (takoyaki, croquettes, karaage) and very competitive price compared to equivalent restaurants nearby. Ramen on offer was spicy miso or tonkastu, both excellent as well. The chef only cooks with fully authentic ingredients; imports permitting, I hope they will offer the Osaka okonomiyaki again soon!

Just tried eating at Nobuya this past weekend. This Japanese restaurant owner serves authentic ramen dishes which are OFF THE HOOK!!! :-D ONE man show!! Takes a while for your food to be served at the table so come early! Try a Ramune for a beverage as well.

Please be aware you will probably have to wait but the food is definitely worth it. The Karaage and Takoyaki were amazing appetizers and the Tonkatsu Ramen had a delicious broth with loads of meat. To top it off the owner is a super nice guy and despite doing all the tasks a restaurant requires he finds some time to talk to every customer and create a warm and welcoming environment. Highly recommend to anyone thinking of going.

Overall, I had a fantastic experience at Nobuya. Do be warned, you will have to wait for your food as its prepared fresh by the owner of the restaurant. This could take 1+ hours, bring a book or something to occupy yourself if youd like. However, it is worth the wait! For appetizers, I had the kaarage and takoyaki. Hands down the best kaarage Ive ever had. The chicken was perfectly fried along with a personal blend of the owners dry spices + sauces paired well. The takoyaki melted in my mouth and the flavours were fantastic. For the main I had the tonkatsu ramen. The broth alone was delicious, fatty, but not too overpowering while still having a clean feeling. The portion sizes as well were amazing, Ive never had so much meat in my ramen bowls compared to what Nobuya gave me. I couldnt even finish my bowl because it was so much. Definitely worth the experience if youre comfortable waiting.

If youre coming here for good authentic Japanese ramen or even just good ramen please turn around. In my bowl of noodles there is a concoction of toppings that dont fit each other, picked ginger(?), sweet seaweed(??), heaps of raw onions & garlic, a sad excuse of a chasu, and a tough soggy tonkatsu. The only traditional topping I see on here is the kelp and dried seaweed, oh and did I mention that there is not even an egg in this $20 bowl of noodles?! All on top of noodles so soggy that they break apart on my chopsticks. I actually came back from a trip to Japan a couple days ago so I would say that I have a good idea of what good ramen would taste like. For how much the owner (and other reviews) boasts about how authentic the ramen here is got the opposite of good and actually left the store that evening angry. However, I do have to compliment what is good. Ive also ordered the takoyaki and kaarage (pics below) and they are one of the best Ive had in Toronto. My total that evening came to ~$60 after tax and tip, I did order a lot but these are premium prices - if only the ramen tastes as good as the appetizers. Finally, the owner was very pushy about giving him a good Google review or to tip well (but he has no staffs). I can only assume that the rating for this store is inflated cause of that. Thankfully I didnt come during a busy night (only 2 other tables there) so my wait for food is only ~30mins. I cant imagine waiting 1hr+ like other reviewers and getting just garbage ramen. Go elsewhere.

My friend and I went on Saturday evening, and got there about 20 minutes early. A number of other customers also arrived early. The owner was so kind and friendly and you can tell that he loves his restaurant. He lets all the customers know beforehand that there will be a wait for the food - about 2 hours. We got our appetizer (karaage) about an hour in and our mains (tonkotsu ramen) in just under another hour after that. The food was delicious and like he says worth the wait! A couple of tips for people would be to follow the restaurant on instagram to be notified what days its open and bring something along to spend your time waiting :)

My husband and I stopped by here for the 1st time today. Such a great hidden gem. The owner was extremely friendly and the food was delicious. We both left feeling really full and satisfied. We ordered 2 bowls of the Tonkatsu ramen and the chicken karage. The chicken was really moist and flavorful. The Raman broth was creamy. We would highly recommend this place!

Little cozy restaurant with cool decorations run by just one Japanese guy. It is quite the gem in Mimico. My friend and I ordered ramune, karrage and ramen. Both of us were beyond satisfied with the food. The owner is especially energetic and passionate about his work. He didn t mind me practicing my poor Japanese with him and even gifted me a package of ramen and green tea before we left. He also makes it really clear to everyone who walked into the restaurant, before they were even seated, that the wait is going to be long. So please be prepared and expect to spend some time entertaining yourself. I saw someone brought a book and their friend was knitting. My friend and I watched videos using the restaurant wifi to pass time. But the experience is worth the wait. Make sure you also follow the social media account closely to check their opening hours. It is not open everyday but you can message the owner through social media to check which day is open. I would also arrive 15 minutes before the opening time to minimize the wait. If I recall correctly, the place was full within 20 minutes. But despite the need of high skill in time management on your end, it is definitely a must-visit if you are around the area. Now I do have to say though, the ramen is not the most authentic. At least from my experiences, it doesn t have the traditional toppings a ramen has. I can say this because I have been to Japan many times and my mom went to culinary school in Tokyo then opened a ramen restaurant with my dad in Japan for 10 years. So I completely understand if some people can be put off by this or even disappointed. But I think the bowl of ramen that was served to me that night was still good ramen. Please expect it to be a bowl of ramen with some twists. Just like the karrage, traditional Japanese fried chicken doesn t come with sauce. But this owner added some sauce on top and I think the sauce elevated the taste of the chicken to another level. If you want your usual, traditional Japanese cuisine, you can fulfill your needs at your place of choice. But please visit here with an open mind. If you don t like it at the end, that s fine. I m glad at least you gave it a try.

We tried Nobus Tonkatsu ramen and Karaage. Pork bone broth was very rich and flavorful. Garnishing in the ramen blended perfectly with the broth. The tonkatsu meat in the ramen was a bit chewy. Karaage was well seasoned and a lot less salty than most ramen restaurants, which we appreciated. Both of the dishes were well presented and in overall, very tasty. If you are a first-timer at Nobuya, I would definitely recommend the Tonkatsu ramen for your main dish. Please note that Nobuya is a one-man-show, and you may have to wait 2+ hours for your main dishes to be served!

Never go here. Owner is super irresponsible. Even making reservations. He doesn t show up and opened his restaurant. The website is useless because when it said it s open. It doesn t. Phone no# is no longer working. Never come here again
