Service is kind of blah but good for where it is located. Good steak selection and oddly enough some pretty good sushi if you are into Texas sized sushi rolls. I've had several dinners here and it can be quite busy on odd nights of the week so just make a reservation if you are going.

I ordered the Spice Dusted Ribeye, and let me tell you it was absolutely deluxe. The steak was cooked to perfection, with just the right amount of seasoning to enhance the natural flavors without overpowering them. Each bite melted in my mouth, and the spice rub added a delightful kick that kept me coming back for more. The atmosphere was warm and inviting, with a rustic yet upscale vibe that fits perfectly with the Cowboy Prime name. The staff was attentive and friendly, making sure everything was just right. If you’re in the mood for a top-tier steak dinner, this place is a must visit. I’ll definitely be back to try more from their menu!
Steaks were all burnt on the outside but cooked to the right doneness. Acrid taste is impossible to get out of your mouth so everything else after that tasted terrible. For what it’s worth the manager and server did a good job of trying to make it right so that was nice. The atmosphere and service were good enough, we had a nice evening overall but the food is just not worth the prices
Brunch was fantastic! Rack of lambs was amazing. I was disappointed they didn’t have mint jelly but Dylan recommended a reduction and that was superb on the lamb. The French toast was good. Service and food was worth the price! We will be back when we go grocery shopping at HEB again.
This restaurant is supposed to be one of the best steak houses in Midland, Texas. The price for a Wagyu steak was supposed to be $120, which I don't mind paying if the quality of the steak is justifiable. Sadly, this is the opposite; the steak was hard, toasted, had no flavor, and was dry. I don't understand how the Kictech will ruin a Wagyu steak like that. Customer service is not the best, and it is unacceptable that a restaurant where most of the clientele are business people doesn't offer Wi-Fi; even McDonald's offers this service. The restaurant looks fabulous and fancy; however, stile should sacrifice the test of the food. To price for the quality of food, I was not impressed whatsoever. It might be fancy for the area, but it It is not worth it.
Steakhouse Heaven! This local gem nailed it! Steaks cooked to absolute perfection - melt-in-your-mouth delicious. The True Buckaroo cocktail, is a generous Old Fashioned done right. Crispy rock shrimp app was a fantastic start. I would personally skip the sides, but SAVE ROOM for the Baked Texas (for two!) - worth every calorie. Go for the steak & drinks, stay for the dessert!
I celebrated my 35th birthday @ Cowboy Prime with my wife. The service was EXCELLENT, the food was PERFECT, the music & atmosphere was ON POINT! Definitely won't be our last time going... Anniversary coming up😁
The food was delicious. It was nice to go to a steakhouse in the Midland/Odessa area, and not have to send it back because it was not done properly. The waiter was the best we have ever had. He was attentive and had excellent reccomendations. This will definitely be our anniversary go to spot.

The worst staff ever, the hostess with broken hand was very rude and the old lady too. I went me and my husband on wednesday at 5 pm and they gave us a table next to the entrance of the bar. I was very happy going there on my birthday ! And we left without giving us another table while the restaurant was empty only 2 tables with people

Enjoyed the place, but wish the music was more relaxing the 80s rock did not suit the 5 star quality they are trying to achieve. The steak was without flavor. The sea bass however was amazing. .why would you run out of you house wine on a Saturday night dont understand that, I had to settle for something else. At the caliber this place is trying to achieve you should never run out of anything. The atmosphere was great decore beautiful, music choice not so good, dont get me wrong I love me some 80s but not when Im having a 300.00 meal with my husband. The sushi plate was parr, however the soy sauce bottle was all sticky to the point I had to go wash my hand. Over all will go back but not anytime soon.
Over priced steak. Ordered the wagu ribeye, even picked out the 1 i wanted from the fridge. Steak came to me with no fat cap. The steak was over salted and extremely chewy. When asked about why no fat cap this is what they turn into the wagu meat balls and hamburger. When I pay $150 for a steak my expectations are extremely high. I have found much better steaks for a little more and a lot less at other places. The atmosphere and presentation are very good.

Service and food was great. The atmosphere was pleasant except that the music was so loud our server could not hear us and we could not hear her. I kindly asked if the volume could be turned down. It was immediately lowered to an almost acceptable level only to return back a few minutes later. I looked around and didn t see anyone who was there for the music as entertainment? Makes you wonder why an establishment as this would ever think that s it s a good idea to play loud music at lunch?
Great dinner here. The atmosphere is beautiful. We were seated in a large and comfortable booth. The food was perfectly prepared. Service was excellent.

If you ve been to a fantastic steak house before you re gonna be disappointed. The wagyu is mediocre at best. The lobster was extremely overcooked and not fresh at all, the octopus was way too chewy and not appetizing, pan seared sole was meh, wagyu way overcooked for medium this is top tier meat so that s disappointing. Second time we ve been and just disappoints for the price point. We tried giving it a second chance. For a 150$ date night sure this would be great but it s 300$ for a couple bare minimum. Charging Miami, Las Vegas, Cali high end prices for a place that s definitely not worth it taste wise at all. I will say the service has always been fantastic but the food, drinks, etc, is extremely sub par for the price as a fancy steak house we ve lived all over the states(Chicago, Denver, Miami, NYC, Honolulu, etc) and visited about 30 countries, and it s not on par for the price sorry. The atmosphere is good as well though I will say that.

Love this place. The sushi is always so fresh tasting. The oysters are from Canada. I enjoyed them thoroughly with the serrano sauce. Fish and steak were amazing. The staff really check in frequently. Will be there again

Staff was incredibly good. I ordered a $100+ steak medium rare and it came out very well done. I asked for a replacement, to which they brought me a rare steak that hadnt been properly rested and offered a complementary salad for my troubles. I spend over $1000 on 3 people, so I expected a perfect steak and didnt get one. For being a Graham Elliot restaurant I was unfortunately disappointed
Im conflicted with this review! I first visited in December 2023, I had a sushi appetizer and a drink. Thats it. The sushi was excellent! Since that time, I have been hearing many inconsistent reviews about this place, particularly about the steaks. So, during this recent visit, I decided to avoid the steaks and try the Lamb chops instead. To accompany the chops, I ordered jalapeno cheese sausage, fingerling potatoes, and lobster mac-n-cheese. I will comment on these items alone and not include the comments at the table regarding the steaks. Lets just say that I am glad I didnt order the steak! The Lamb chops, however, were fairly decent. Its not the best Ive had, but its certainly not the worst! They were perfectly cooked to medium rare. They were tender and seasoned well. I like my lamb chops sweeter and less salty, but they were good none the less. For the price of $58, you get basically 4 chops instead of the usual 6 at other places. The jalapeno sausage was average at best and cost $9. The fingerling potatoes were nothing to write home about. They lacked a bit of flavor! Not worth the $10 price! The lobster mac-n-cheese was bland, and you only get a couple of shreds of lobster on top of the mac-n-cheese. There are places in the area that serve way better lobster mac-n-cheese and for less than the $20 price tag at Cowboy Prime. Overall, this was just an ok experience! If I return, it will be simply to eat the appetizers and sushi. The octopus was excellent, and I also enjoyed the prime beef tartar, although it was a little strange eating tartar with chips!

Nice Place meeting with family
Ive been here a few times. I highly recommend having one of the sushi rolls for an appetizer. The steaks here are absolutely amazing.The drinks are delicious, and the staff is on point.
Wife and I come here often. Their food, atmosphere, and service is all very good. I love their crab cake and rock shrimp appetizers. Their sushi rolls are very good as well.
I would have liked to rate this place better but the experience when the check came was so unexpectedly rude that it made it a negative experience. A lady who was not our server brought over the check in the middle of a conversation at our table. She asked how everything was and we told her it was good and thanked her. We proceeded to continue talking and she stood there and would not leave the table until we paid. I have not been at a restaurant where this was the practice. It really tainted the experience. Hopefully you can teach the staff that leaving the check and not rushing the guests to pay is a better standard of service.

First of all. I made reservation 3 days ahead for my anniversary. We then were sat right next to the door where everyone walks in by. So I can t say I enjoyed the atmosphere at all. We were not told about the special sushi roll of the night but heard a different waiter tell the table behind us. Steaks were okay. I get a way better steak at other steakhouses in town. Save your money. I would not go back

Ok..first off. Too expensive for the food and service. The shrimp dish had two pieces of shrimp, all we tasted was the sauce. Steaks way too tough for 100 plus. Table dirty, floor dirty, waitress spilt wine on the table and no AC. Save your money and go to Gallaghers in Vegas.

I ve eaten here four times now and have tried an assortment of items from the menu. The appetizers, sushi, sides and desserts are absolutely wonderful. But, the most important part (for a steakhouse), being the steaks are a real disappointment. I ve had three of the higher end steaks and they just aren t worth the money. The last, being a $150 ribeye was underwhelming. The thickness was under and inch, approximately .75 . The steak seamed to have appropriate marbling for the type of Wagyu it was, but it lacked any taste and seemed a hair over cooked. I would honestly take a $50 Delmonico ribeye from longhorn steakhouse over the $150 one I got from Cowboy Prime any day. Like I said, everything else about the restaurant is great, but the steaks being so underwhelming (at a high end steakhouse) is why I give three stars.
Dinner is delicious, but my husband and I went to brunch last Sunday, and it was the most disappointing brunch. The French toast tasted like it had been thawed from a Sams box, and the scrambled eggs were horrible. We were so disappointed because we had such high expectations based on the times weve been there for dinner. Cowboy Primes chefs need to get their act straight. Its not exactly IHOP price. I would dare to say that IHOPS French toast was way better. We paid almost $200 and were so bummed.

Hands down my favorite restaurant in Midland. I am always impressed by the service and quality of the food. Definitely comes with a hefty price, but for special occasions, this place never fails us. I crave their lobster mac and ahi tuna creations!!

A very good place to have lunch, and drinks if you like. The place has a great atmosphere for families and friends, food is very, very good, with healthy choices and great drink selection. Prices are down to earth.

A grown up restaurant in Midland! I love it. Ive been for lunch and dinner. Both - amazing. The staff cant be from Midland, do they fly them in. The best service Ive ever had in Midland. I recent had salmon with a crab cake on top. It was outstanding. If you are in Midland on business check it out!
Had high hopes for this place, it looked great and passed the eye test, but the food was just not that good. Started with a crab cake that was very good, but went down hill quickly. My cocktail was good too, but everything else was chain restaurant quality. My wife got the roasted chicken with potatoes and asparagus, and the chicken was so overcooked she could barely cut it. I got the tomahawk pork chop and it too was overcooked, dry, and room temp. They sliced the pork chop before serving it to me why do they do that? It immediately starts drying out and getting cold. Leaving it whole retains moisture and maintains a warm temp. The chop also didn t have much flavor, and the sides were just mediocre. The price was high, but we knew it would be going in and were happy to pay for a nice meal, but this wasn t a nice meal. I ve honestly had better food at a roadhouse than this place. Obviously by the name and the menu you can tell that their speciality is meat, but the meat was the worst part. This restaurant has the signs of someone starting a nice business and then going back to Chicago and hoping for the best. There was no love or passion in this food. It was just pretentious and overpriced, and again over cooked.
Good wine list, tasty and interesting cocktails, very good limited menu that allows them to focus: anything that you order will be good. They expend a lot of effort on getting fresh seafood to West Texas, which is reflected in the price vs a coastal restaurant, but theres no other way to get good sashimi in West Texas. Service is excellent.
I was a little skeptical about cowboy prime at first. I thought to myself, Just another steakhouse. Not that anything is wrong with steakhouses, but when in texas, you really have to be a little different to get me to come back. Well, cowboy prime did just that. Their prices might be a little intimidating at first, but believe me, you get what you pay for. For starters, they offer akaushi breed beef, which is something I havent tried before. Its somewhat like the wagyu breed of Japanese beef, so you can expect it to be juicy and tender. We got the NY strip and beef stroganoff with the cabernet reduction and bearnaise sauces accompanied by their rock shrimp (temporary off menu item), smashed fingerling potatoes, and parmesean truffle fries. We also ordered a variety of theirs whiskeys and cocktails. Lets start with the waiters. They were very attentive and knowledgeable on not only the menu but the liquors they have available, which is something you dont see very often. The atmosphere isnt out of the ordinary, but you can see that everything is well maintained and cleanliness is one of their priorities. The food was immaculate. This place definitely stands out from your salt grass, longhorn steakhouse, etc. They give that extra flavor you wont get at your neighborhood steakhouse. Their seasonings and herbs are very well blended. They do a fantastic job of balancing their sweet with savory items. Overall, the food I had today makes me want to go back to try their other menu items. You may take a bit of a hit in your wallet, but for a special dinner for a special someone, its worth it. I thoroughly enjoyed the experience there. Great job cowboy prime. I had a fairly nice review for them even though the quality fell off quickly. I hoped it would maintain. I did love the sushi. My family brought me home a steak sandwich the other afternoon, and I didnt want to tell them it was terrible. I wasnt sure who made it. It looked awful. I thought they were kidding when they told me I had paid $20-30 for sesame bread with raw beef and arugula. Not raw in a tasty way. Just a failure of a sandwich.
The food is excellent. I guess just after all the hype I heard about this place, I was just a little disappointed. Ive had as good or better at places like Ruths Chris, Flemings, Eddie Vs and Guard and Grace.
I made reservations and was on time and they couldnt even seat us and offerd to seat us at the bar that had no seating unbelievable and if your gonna run a business run it right!

The food was delicious, the server was great, overall we had a lovely experience. Not very many people cook octopus correctly, but they did an amazing job on the octopus appetizer.
This is a place you eat w your pinky stinking out ! & they make you pick your knife ! As a laid back gal w jeans and a sweater . Felt so out of place ! I know it s a steak joint , but having some chicken on the menu wouldn t be a bad idea ! Even Gordon Ramsey steak houses have chicken options . We only went there bc cork and pig was to busy ! My man had the steak sandwich and it was actually tough . I got the pasta and wasn t told the sauce was all pesto based ! Won t go back, but if you have 300$ to spend on two meals and eat w a pinky sticking out . That s a place for you ! Saltgrass is way better
Midland is a dusty Texas town that lacks big city attractions. One would think that a first class restaurant requires plane fare or a five hour drive, but that s not necessary. Cowboy Prime offers the best service in town and the best food. A reservation time is honored and you re greeted by polite, well-trained staff that are familiar with the menu. The quality of food is worth the higher prices and the bar serves up excellent drinks. Occasionally, the music doesn t match the setting. I love Van Halen but not while enjoying my $250 dinner for two. We dine there regularly - about two to three times per month. It s that good.
Im not impressed with this establishment. Too noisy,very loud, too crowded and uggh the waitstaff very slow. I wont return. Ill continue to go out of town for a good meal. Parking: Good luck finding a spot close to door. I was there for a company lunch and I had park almost a block away and walk in the rain
Wow, the akaushi ribeye is really something special. If its available to you, it is the only way to go. Lobster Mac is also pretty phenom. Wait staff is some of the best in Midland. Wine/bubbles selection and cocktails are all fantastic.
First time there. Service was mediocre at best. Food was horrible and they had to fix the steak 4 times. Worst of all for this quality of restaurant to have to pay for the steaks that were screwed up absolutely the wrong thing to do. Not recommending it to anyone. Best part of the night was the server tell me that I didn t know what a good steakhouse and steak was. Not recommended and worst first experience you can have.
First disappointing experience here shame it was on Mother s Day. Food took forever, tables that arrived and ordered after us received their food and I had to go ask the hostess about our order? Waitress finally came by and informed us they had messed up my wife s order and had to remake it apparently while my food sat waiting received my bill for $95.86 and a have a nice day. Disappointing but will try again another day.
Went to Cowboy Prime for Sunday brunch with high expectations. None of the entrees ordered around our table were good. The French toast was undercooked, runny, and almost inedible. The steak and eggs were not great either, especially for the price! For a place that supposedly prides itself on premium quality steak, the quality of meat and its preparation was sadly lacking today. For the $$$$, choose to go elsewhere. The nice atmosphere does not compensate for the poor food.
Beautiful place to eat
After hearing how great this steakhouse is, I was excited to try it. Myself and five of my co-workers ordered the bone-in cowboy ribeye. We all received ribeyes without the bone (may have sold out). My traditional ribeye was cooked to perfection and extremely tender. The service was prompt and friendly and the restaurant is well maintained.
The steaks are good, but theyre not great for the price. Service was impeccable though. I doubt Ill ever go again.
Carlos was a fantastic server and SO hospitable! He was very passionate and took great care of us and made suggestions on drinks and food. We tried them all, and we LOVED. Our food was fantastic - The crab cake was to die for! This is the best dining experience weve had in West Texas period. We will certainly be back!

This place is absolutely breathtakingly stunning inside. We went for Mothers Day Brunch so it was definitely busy. We had reservation and was sat right away. As soon as we were sat, our toddler did what she sometimes does best and had an epic meltdown. The staff and waiter were so helpful and kind. They ran to the bar and got her some oranges and fruit to see if that would help. And took her order right away. The food was absolutely delicious. I had the Lobster Benedict so good. My son had the aged hamburger, and he kept asking if he could get another one to go. Service and dishes were spectacular!!! Will have dinner here again... maybe date night next time!

TURN DOWN THE MUSIC!!!! I wont say too much right now as they have only been open for about a month. Ill update more when we try again. The food was very good, good size portions, well presented and tasted great. I wouldnt say it was anything out of this world but very tasty. I do think it is over priced for what it is (even though it is good). The restaurant is beautifully decorated. The music was a bit of an odd choice for an upscale restaurant. It was very loud classic rock, which I like, but it is not suited to a romantic or fine dinning venue. The service was very lacking. Wait staff and bartenders need to be better trained. If you order one drink twice, it should taste the same both times. But overall, we will try it again.
I want to start off by saying I never leave reviews. Especially not negatives ones, but this was such a disappointment. We ordered the special sushi roll of the night, which was absolutely disgusting, then the steak and fries and another steak. Both of our plates were cold. Both of our meats were undercooked, and the fries were hard. This was the biggest disappointment birthday dinner ever. We paid $180 before tip. The service was pretty good actually, but the food itself absolutely disgusting. Literally Ive never been so disappointed. It ruined my entire night. We had such high expectations.

The food was underseasoned to my liking, and the steak was overcooked. The brulee for dessert was pretty yummy, though. If you dont call ahead for a reservation, which we didnt since it was our first time and a non busy time of 3/4 pm, you are treated almost as a second-class citizen by the hostess station. It was semi disappointing.

12th visit to Cowboy Prime. It has always been excellent, until tonight. Had to wait past the reservation time. Took forever to get water to our table. 3 diners, one ordered a mocktail, had to be remade because of alcohol, 2nd person had to wait 20 minutes for a glass of wine. Long wait again before our appetizer/salad order to be made. Ordered entree at same time. Got my wonderful Caesar Salad. I ate less than half and the entree came. I wanted to eat my salad. They took my entree back somewhere until my salad was done. They brought back entree, my ribeye was barely warm. So very disappointing. The service was poor. We usually order dessert too, but I just wanted to leave. Already have brunch reservations this month. I sure hope it is better.

Great place to eat for a fine dining experience. Service was good, appetizer or meatball, and lobster Mac was delicious. Steak fries were spectacular, and my peppercorn filet was cooked exactly how I wanted it. The only negative would be that it was loud, was tough to hear my tablemates.
Came here for my birthday dinner and it was such an inviting atmosphere. Service was excellent, especially after my steak arrived undercooked. The general manager and other managers came to make sure all was right and provided a complimentary dessert which was so delicious! Will definitely come again for another celebration!
Have had 2 really good experiences here. Creative, really good food, and a great staff. Service has been exceptional both times. My only dislike on this place is the restroom. Not the restaurants fault though, as you can tell they try to keep it very clean. Unfortunately, some people want to treat a nice restaurant restroom like their well site Porta Potty!

I had the pleasure of speaking with corporate manager Sofia while I was waiting for my to-go order, she took the time from her own meal to make sure I had what I needed as a customer. My server Jacea was kind and efficient as she made sure I got my order in a timely manner. Make sure and make the time to dine at Cowboy Prime, you will not be disappointed.
This used to be our favorite place in Midland but seems to be going downhill. Great service or at least effort by server. One of the staff was on phone regularly then taking pictures of a drink at the bar. Shrimp cocktail was unusual but good. Lobster mac & cheese was good. Truffle fries tasted several days reheated and not fresh. Steak seemed like a different cut of meat than sold and was cooked more done than it was ordered. Dessert was subpar, seemed as if reheated, and also seemed as if it was trying to be hidden by burnt ice cream. I hope Im wrong and this was just a one off but per last night s experience Cowboy prime is not what it once was.

Yall!! Emily provided the most amazing explanation that I ve had in midland Texas. She was attentive and so accommodating. We were initially seated near the door and it was cold she moved us and took amazing care of all our needs and wait the food!!!! Prime rib and creamed finish with champagne. Yassss
Sara B was our server, and she made our experience so enjoyable! The most excellent service we ve ever had. We went for brunch, and had the French toast and eggs Benedict, which were both cooked to perfection.

Looking for an upscale dining experience in West Texas then check out Cowboy Prime! I can recommend the Steaks, Octopus, and Sushi. The menu has been designed famed Chef Graham Elliot. The service here is by far the best in all of Midland-Odessa. The place is not cheap but well worth it!

The food here was extremely expensive and had no flavor, was burnt and the chicken was sent out still bleeding. It took an hour for our food to come out. Will not be going back.
The prime rib beef stroganoff is delicious! Love, love this place! The service and food is exceptional! Sushi is to die for! And the waitor we had was experienced and knowledgeable. We will be back for sure!
The food is quite good, you would imagine the specialty would be their steak with a name like this. I was not impressed with the grilled ribeye, that isnt to say it is bad. Its just not as good as I would have expected, my wife had the peppercorn crusted filet and had the same experience. I can match the flavor of these steaks at home for fractions of the price. What I WILL say though is that the Yukon mash is absolutely amazing. I enjoyed that more than the ribeye, I need to know the secret to those potatoes. Overall I was satisfied with the experience, but I do wish a side salad would be available prior to the meal, and some additional substitute options for sides would be excellent. I just dont favor brocollini or asparagus.
The service is excellent and the food is delicious. The Peppercorn Filet is amazing and the Short Rib Stroganoff is truly hard to beat. Save room for desert because the Baked Texas is on its own level! Love the Brunch options!
My wife and I went this weekend and what a great choice, the food was awesome from the fresh oysters, sushi , Caesar salad, rack of lamb, lobster tail , and Dom perignon. The whole evening was beyond what we expected but what topped the entire night was our server Gabby , top notch service very knowledgeable and her smile lit up the room .Great job to the entire kitchen staff for such a great meal Thank you , We will definitely be back .
Great place to go for sushi but I was not pleased with our steaks. It was a bit chewy and the flavor just wasnt there.

My wife and I ate here for our anniversary, because she heard so many great things. We were not disappointed. Staff was consistently checking on us, and the food was delicious.
First time at Cowboy Prime and it was delicious!! TYLER our server was amazing!! He was great to talk to, answered all of the questions I had about the food and took great care of us while we were there. So glad I chose to have my birthday dinner there :) Can t wait to go back! The sushi is to die for, the scallops were amazing and the rack of lamb was cooked to perfection!
Food is way over priced for what is served. A live snail was found on steak garnish and they dont have escargot. The head chef came out after we showed the waiter, and laughed saying this is what you can expect with the freshest ingredients she was dead serious and didnt apologize. Dessert was underwhelming. Really terrible experience for an anniversary dinner.
Great appetizers, desert and wine. Service was great as well. Both ribeyes we ordered were select cuts at best. Both were tough and slightly over cooked without much flavor. Hopefully they get this fixed for the price they ask. I really hoped for more from here now that my favorite steak place in Midland closed.
The beef stroganoff was so delicious. The bar tenders are so attentive, and they can make some awesome drinks. I will definitely be coming back a lot.
I went there because my sons friend recommended it to me. The atmosphere was all good. It tasted even better because my son bought it for me.

We walked in and immediately regretted it. We are rednecks, so it was a culture shock. However, as our experience continued, we began to love this place. The service is amazing and the waiters/waitresses dont discriminate based on your class, the food is delicious and has the perfect portion sizes, and its just a cool environment in general. The only downside is the price, but I guess thats just part of the territory.

This place is divine, the food is exquisite, the service is outstanding, this place was absolutely amazing. My only complaint is that the salmon was dry and didnt have much flavor, otherwise, from the steak, the sides, all of the cocktails we tried, everything was amazing. Definitely recommend this place
I can t say enough good things about this place. The food tastes, like none of ever tasted, and the service was beyond compare. I can hardly wait until my next Thursday night date night with my lovely wife.

My husband and I went in after a long drive from Texas. Beautiful peaceful atmosphere to start off with. Wonder friendly staff. The star of the show was the food! Starting from steak tar tar to the main course!! Wonderful experience.

I went here with a large group. The appetizers were delicious. Sushi, shrimp and lobster Mac/Cheese. Drinks were always refilled promptly and wait staff were amazing. Very helpful, accommodating and friendly. Sadly, most likely because of our party size, the main course was not terrific. The filet I had was a bit undercooked and sadly cooled off, not warm at all. My scallops were fairly bland and rubbery. My wifes bone in ribeye looked good but I did not try it. I am sure if I had said something it would have been taken care of, but because of the group I was in, I did not want to be the party popper. May try again as just a couple.
Everything was outstanding! Best steak in Midland. Cant wait to eat here again next time Im in town.

Updated: Weve given Cowboy Prime multiple opportunities. Each experience is very similar to the last. 35 min wait even with a reservation. The only things my $607 dollars bought me was.... out of temperature food, poor service, BUT a very very good Lemon Drop Martini. Definitely the last monies well be spending there. They simply do not deliver the 5 star experience to match their 5 star price. Previous review: Very disappointed... Server was very nice ,however failed multiple times to get our order correct.. Australian wagyu strip $80 dollars piece of meat was tough but very flavorful (it was tough) lobster tail was forgotten and brought after dinner was complete (sent back and sent to another table Im sure). Weve visited Cowboy Prime now a few times and the service has been hit or miss as well as the entree. Im still trying to figure out if the experience is worth the price tag.
Nailed it. Went to dinner for my one year anniversary. Everything from ambiance, service, taste, and presentation was excellent. Steak was perfect, shrimp cocktail presentation unique, and the taste even better. I was truly impressed. I will definitely be back.
Went eclipse chasing in Midland, TX last weekend and had dinner at Cowboy Prime. Wonderful experience. Had to wait abt 10 min before our table was ready and was served a complimentary champagne. We had the Grilled Spanish Octopus, New Zealand Lamb Rack and the Wagyu Steak, all prepared to perfection. Our host, Dee, was wonderful. Not sure when Im gonna be in Midland again, but I will be dining at Cowboy Prime when Im there.

Food 7/10 Atmosphere 10/10 Servers are knowledgeable, but they act like you beneath them, also too many people (managers etc) were interrupting during the meal to ask if it s good - so 6/10. Also, we booked a table in advance for 2 (two females), am they tried to give us the worst table right behind servers who great customers meanwhile there were plenty of bigger table available for 4. I was expecting more, but I feel like since we were just females they didn t respect us as they would if we had a male with us. Too bad. Food was decent but not fantastic by any means. That s why 3 stars.
Loved it here staff is so lovely, food is amazing but I d say it s not for people who eat chicken strips for every meal this place is for people who enjoy good quality food and complex flavors!
They need to have more kids options. Tables are very close to the next table and was uncomfortable because we had a baby. We couldnt get up easily. I can hear the table next to us conversations .
Id say this a 5 star in Midland for sure. Sushi was surprisingly good. Our waitress was awesome and gave us the names of cool bars to find afterward.

Was in Midland visiting friends and we ended up going for the Prime Time happy hour on Friday. The sushi, oysters and cocktails were amazing, so good we went back on Sunday and again it did not disappoint! Next time Im back in Midland will be going back for sure!

Our service, drinks, and sides were great. Can t say the same for our wagyu steaks . The steaks were cooked just right, but outrageously smokey and that went for the 4 steaks we ordered. Atmosphere was great, although for the price point not worth being a regular spot.
Fabulous all around for our anniversary dinner. The service was great (shout out to Makenzie) and the food was fantastic from the appetizer to the delicious steaks cooked to perfection, to the after dinner port. Will definitely be back. Pricey, but worth it for a special occasion.
There is a new King in Midland!! And they are Cowboys! New restaurant that blows the doors off the competition. Head chef is Graham Elliot of American chef famedom. Wow! Great dining experience! Loved the menu and our waitress was amazing! Took my friend, she is from San Antonio and a foodie...like me...she was very impressed! The shrimp cocktail so yummy, loved the horseradish dip...had the buffalo filet and waghu sushi...super delicious! This restaurant is stunning! You will love the entire dining experiene!!! We did!
Absolutely one of the best places in Midland. The staff is incredible as well as the food and ambience. Our waitress, Natalie, went way beyond being a waitress. She was the best!!!! I highly recommend Cowboy Prime.

After a horrible experience at another fine dinning establishment before we even got sat. We ended up going to Cowboy Prime and it was the best decision we could have made. From when the door opened to when we left the whole experience was above and beyond what we expected. And our waitress was in training and never missed a beat. Highly recommend and will be regular customers!! Once you taste the food you know your in a upscale restaurant!! Parking: Had plenty of parking spots
We googled a steakhouse near us and it took us to Cowboy Prime. This was a very different experience. Im a Texas Roadhouse kind of guy, so, this place was a bit fancy but well worth it. We have a Ribeye. It was the best. Appetizers of loster and Mac and cheese was incredible. The whole place is a fine dining experience, so, you are looking for a place to take a date, this would be the get dressed up place to go.

Was not impressed tbh. Service was top tier Eric is that guy for real. Atmosphere is beautiful and quite calming. It was just the food wasn t all that.
Cowboy Prime is one of my top dinner options in Midland. Although, within the past two months there has been two separate instances where I was not satisfied. First time was my anniversary dinner; the roasted chicken was undercooked. The manager took the plate off my ticket and gifted us free dessert and a $50 gift card. The second time was today, my hot bbq chicken had a hair in it. It may be a while before I go back.
This restaurant is definitely top of the line but be prepared to pay top of the line prices. The steak was delicious and tender. Sushi and appetizers were unique and provided an excellent break away from the traditional Texas steak house experience.
The food was beyond excellent, highly recommend the lobster mac, scallops or tomahawk! Pray your server is Arelie, she made our night so special and we couldnt of had better service. Unforgettable experience, thank you Cowboy Prime!
