Old train depot converted to a brewery with a cycling theme. Great use of old bicycle frames and rims. A warm and welcoming setting with excellent service and good food. The beer is very good as well, with a great selection of ales and lagers. Check it out!
Rode into Canada on motorcycle. First time here, had some appetizers and some good beer. Staff was very friendly and spoke good English. ✌
Really great brewpub with several solid beers on tap, a nice indoor/outdoor space and some solid swag in the gift shop. Service was excellent and the beer was cold. The Czech Pilsner was the perfect choice on a warm day.
Absolutely enjoyed our experience, service was fantastic, I enjoyed a flight of beer (and some to go), my wife a Bloody Caesar. Atmosphere was great, a lot of other people had the nachos (get them) and enjoy. Much appreciated can’t wait to visit again, even if just to see that big @$$ fan
After a fun day, a friend suggested Siboire Depot for dinner. We were not disappointed!! The staff were friendly and on point. We all agreed that our orders were well seasoned and delicious. I wish I had remembered to take more pictures of our dishes and drinks, but honestly we had so much fun that I was caught up in the moment and forgot. We will definitely be coming back.
The staff were incredibly nice We tried the beer tasting flight , every flavour was decadent! We also had the trio platter of fish and ships: W-O-W 😯! The haddock, salmon and the other i forgot were breaded lightly with unique flavours. Fried were tasty as well along with the soup of the day Definitely loved the decor and the ambiance of the bar it was almost full on Monday night! I am glad we made reservations before I’d definitely go back

First visit to the Siboire depot. Very beautiful building, interesting and original. The beers are excellent, nothing to complain about there. On the other hand, never stop there to eat. Very spicy pulled pork burger (too bad for those who dont eat spicy not to be warned in any way) but ESPECIALLY tasteless... We expect to bite into a crispy bread with tasty and sweet meat, but ultimately it is a soft bread moist with meat, probably defrosted, which only tastes like water. Their specialty fish & chips... Being an amateur I decide to take their discovery plate (which includes all their fish varieties) The breading arrives very soft and soaked in oil, nothing crunchy. The salmon wasnt tasty either. The worst fish & chips Ive ever eaten! In short, if you want to stop for beer and youre hungry, grab a fries and eat elsewhere later!

This is my favorite restaurant I come there several times a year, both at the depot and at Jacques-Cartier. My favorite menu is the trout and/or salmon tartare with a beer as a starter and a Nicolas Potel Chardonnay to accompany the meal. Usually the service is always excellent and the servers attentive. On the other hand, last night, the service was dismal from start to finish. Very long waiting time before offering us a first drink Waiting time just as long to be able to order our meal Once the meal was served, there was no way I could have pepper, mayonnaise with my fries, croutons for the tartare and another glass of wine. The server had disappeared. I asked a boss boy what was missing, he agreed but never followed up on my request. I resigned myself to asking my neighbor for a little tartar sauce to dip my fries in and eat my tartare as such In short, disappointing service with a server who probably had too much to do.
Really HOT place. And our server Anthony is a REAL fan. We loved our experience. We will never be able to pass through Sherbrooke again without stopping there.
Just arrived and stopped here for lunch. Had fish and chips (chose cod, other choice also available, haddock, salmon, etc.) which was very good (minor issue no malt vinegar) and salad parisienne - ceaser salad like with small cubes of jambon, also good plus a glass of white wine (Inspiration, good and dry) and an IPA - Bonheur, ~hazy IPA (decent, less hoppy than my liking). Our server Rebecca was friendly and very good.
Lack of music on the terrace, the beer tasting palette , the raspberry beer wow. Im not usually a fruity type, but it is very well balanced, very tasty. I loved her. The fish and chips tasting plate . I had never had salmon fish and chips. Delicious .

I love this place for its atmosphere, its character. The beers are delicious and there is a lot of choice. You can also have a meal there, the prices are moderately high however. The welcome is warm, the service is very good. I ate a truly impeccable salmon fish and chips during this visit with a beer called Trop dAutomne, perfectly complementary.
Semi-burnt and tasteless homemade chips, no point. Trout tartare mixed with too many ingredients which gives a very acidic taste, you dont taste the fish at all, really a shame.. Good service, very very fast and the place is beautiful

Cod Fish & Chips: yummm! ! Just well cooked, tender. The best of my life. Its worth the detour. Menu and service: OK. Former train station, now a public market (distant memories of the 60s!), converted into a brasserie-restaurant: full of charm. Well done !
After moving, we needed to grab a bite to eat, but everything in the city was closed. It was 10:45 p.m. and the kitchen was stopping serving meals shortly. They welcomed us warmly and we were able to relax on the terrace with a drink and a gigantic nachos. THANKS! You made our day!

The servers were really charismatic and it seemed like they loved their job. With the food being really good and the really cool bicycle atmosphere, the restaurant is not to be missed. Special mention for the line of lamps made from bicycle frames, really very unique. On each of my visits, the service has been terrible: very slow (>25 minutes waiting for the bill!) and some employees have an arrogant/haughty attitude while being visibly tipsy. There are clearly better alternatives for spending an evening with friends! Also, it seems to me that there is a lack of choice in the beers offered: the taste profile is quite similar for each. Probably the same malt used for each beer? which is a bit disappointing for a microbrewery... We dont go much off the beaten track, hackneyed and beaten down. The size of the beers also seems quite small to me for the price. Otherwise, the food menu seems to have improved, the portions are generous and full of flavor. I recommend the kimchi poutine!

I love the products from this microbrewery, but the service lacked a little quality. Some items were missing and others reversed. On the other hand, it remains high quality for the beer and it was an excellent visit.
Passing through Sherbrooke to go to Lac Mégantic for the 2024 solar eclipse we stopped at this craft brewery to eat. Not a fan of beer in particular, we opted for a beer tasting. Good choice from the server! We had, as a starter, the small pot of olives, good! To eat we shared the plate (haddock, salmon and cod) from Fish & Chip. Friendly service and good atmosphere. My tastes: Sherbière beer is light and good. Olives are delicious as an accompaniment. Finally, the best fish is cod!

The restaurant is beautiful, a great place to go and have a beer with friends. On the other hand, the kitchen service is terribly long, each time it takes 1 hour to get a hamburger. We waited 1h10 for a brownies . Our dishes were disappointing, wet fish n chips, blender tartare it had a texture of liver paste In short, the beer is excellent, but the rest we were disappointed on several occasions.

The beer is good, but ask to taste first, because some beers are very atypical. I strongly advise against the often very ordinary dishes of the moment. The fish and ships was perfect although a little too salty for my taste. Otherwise, the venison burger and Korean poutine are must-haves. Avoid forest poutine. Otherwise, superb atmosphere. Service to be improved during high traffic!

Par exemple, mettre les chaises sur les tables quand il y a des clients dassis. Un samedi à minuit, ça aurait pu attendre, presque une invitation à quitter, mettez une heure de fermeture, on va savoir à quoi sattendre ou quand quitter.

Favorite brewery in the Sherbrooke area. Food was amazing (highly recommend the fish and chips). If you are in the area, I would say give this place a try and you wont regret it.

The name Siboire is a play on words for a swear word in French. One I almost used when I saw that our bill came to $70 dollars for two. In my mind, the food needed to be better than okay -- even if its pub food. My friends burger and fries were greasy and my croustade was stale. Thats a lot of money for sub par. On the other hand, the craft beer was superb. I had a glass of Discipline. A low alcohol (.5%) beverage (available canned for take home at the Siboire store). The staff was clean cut and friendly (do brush up on the official language though), but stressed on a early Saturday afternoon for reasons unknown. Parking was free, but the parking lot was graced with huge craters. The terrace is verdant, but the view of the concrete parking garage abysmal. If you have been paying attention to this review so far, you have detected a pattern. Siboire is okay...but...

Very disappointed with what the siboir has become, we are usually lucky to have a relaxed atmosphere where we can hear each other talk and have an experience with friends, but my last experiences have been a night club style atmosphere with music super loud, staff whistling all the time, people climbing on the tables! What happened siboir... we have other places for that

The cornerstone of an establishment offering food and elixirs in response to the surrounding spleen is certainly the service. Now, in my eyes, at best, the service is just a cold, rude tad at the Siboire (Im wallowing in euphemisms today). Even the facial expression, the presence that the staff exudes and their way of expressing themselves suggest a seemingly sterile engagement and absence in the exchanges, which befits modern man (I congratulate him for that). Are these bipeds with antisocial personality disorder that I see flocking to? No matter in fact, because improvement is the precious element to aim for, from the outset. So I suggest that the boss hires autistic people to serve us. Customer service will be much warmer, more caring and helpful to a good cause. I give three glowing stars to the city center microbrewery, since one of the employees has already offered me very appreciable, because human, service. I never saw him again. This is what I will call the charming exception which confirms the disconcerting rule of incompetence. Isnt that sordid, in a way? Oh yes! Try the breaded fish. He is good enough to compromise! We guzzle the celestial scaled offspring of Uncle Neptune (served with fries and looking livid) and we almost forget the expression of the taciturn employee who brought it. On these incredible and truculent remarks, enjoy your meal!

We loved the place: The atmosphere and decor (I m a bike lover) is really cool! The food: we had the regular poutine and the ribs: wow, I never thought I would say that, I think it was my best poutine and best ribs ever! For the beer, it was good but I found it very focused on IPA/NEIPA. I would have liked a good white (German style?) and classic oatmeal stout.
