Machiavelli’s reputation precedes it: a subterranean Italian restaurant favoured by power brokers from both sides of politics. You can’t escape which ones, as their photos line the walls. So when an invitation from the Sydney Office of the Italian Trade Agency and the Italian Cultural Institute of Sydney arrived, I was keen to put it through its paces. The dinner was curated by Viola Buitoni (author of Italy by Ingredient) who has spent the last 15 years as a cooking instructor in San Francisco’s Bay Area. Viola looks for Italian ingredients wherever she is, and mentioned finding excellent ingredients here in Australia. The meal’s centrepiece ingredient was Provolone Valpadana PDO from Northern Italy, a cow milk cheese that can be stretched by hand or by machine. It’s then shaped and immersed in a saline solution set into a final shape before hanging and ageing. Provolone dolce is a pliable, milky and clean tasting cheese usually used for cooking. Provolone Piccante has a more robust, spicy quality and some holes in it. And finally, Provolone Stagionato has a greasier, more bitter longer finish, for “eating and contemplating life”, Viola explained. In the hands of Head Chef Domenico Stefanelli, who has been working at Machiavelli since 2014 working his way up from sous chef, the cheese was best utilised as a fondue underlying agnolotti with beef ragu ($46). Veal rolls Saltimbocca (literally “shove into your mouth”) showcased his skills with tender veal rolled with prosciutto and the aforementioned cheese under a classic jus. In a menu with influences that jumped from the south to the north, we enjoyed zucchini flowers stuffed what Sicilian caponata, figs with prosciutto, Gorgonzola and sage, and a beef carpaccio with kale, horseradish mayonnaise and pecorino that was first created in Venice. The panna cotta we ate to finish was among the best I’ve ever eaten.
It's been my third time here, impeccable service, the Italian dishes are genuine (they compete with my mamma's cuisine!), the atmosphere invites to meaningful tasting and great conversations.

Could not fault this restaurant. Prompt service, great pasta, great wine list, amazing cocktail highly recommend the strawberry Rose. The staff were very friendly and great help with the menu. All round amazing experience.
I’ve been to this place twice and each time I visit, the food, service and ambiance are consistently good. The pastas have the right texture and temperature, and cooked to perfection. The desserts are well-made, I could come back to this place just because the dessert menu has more than 8 options. I have tried at least five of those desserts and every single one was decently done.
Loved everything about Machiavelli ❤️. Food was delicious. Service was excellent and ambience spot on. I especially loved my tagliatelle with truffle. Such a simple dish done well, however so delicious. Couldn't fault anything. We enjoyed our visit. Will visit again when we're back in Sydney. Thanks so much x
The worst restaurant Ive been to in a very long time. The chilli pasta was a style from last century and not good. The duck was overcooked, dry, and covered in a thick tasteless sauce. And to add insult to injury they added 100 dollars surcharge onto the bill because it was a Saturday even though the place was half empty.

Wow what a disappointing experience given the hype around this establishment. The horrible cold meat entre that was cut too thick , the stingy portion control , the amateur plate presentation , the basic pasta , the cheap ice cream for desert, the minimal service . I can go on but I won t come back . Machiavelli you have lost your edge

We indulged in Machiavelli s exclusive 3-course truffle degustation menu an absolute truffle lovers dream! The steak tartare was exquisite, the tagliatelle in creamy Italian cheese sauce divine, and the Tagliata Steak with rocket and potatoes the perfect finale. A decadent truffle experience that left us craving more.
I had a birthday lunch here...... extremely happy with my choice..... everything was perfect for me and my guests.
**A Trattoria in Decline** *Ambiance & Vibe:* The restaurant captures the essence of a classic trattoria, with a nostalgic decor that speaks of tradition and deep-rooted cultural pride. However, this is where the charm ends. *Service & Staff:* The waiters are no-nonsense and operate with an old-school approach, but their rushed demeanor detracts from any attempt at hospitality. The front-of-house manager, clearly too comfortable in his role, floated around filling water glasses without engaging with a single patron. His lack of engagement and sheer rudeness were jarring and unacceptable. *Food Quality:* The pasta dishes were decidedly average. The pappardelle was soggy, and the spinach and ricotta ravioli tasted no better than supermarket fare. Its evident that the chef has not tasted their own food in some time, as the dishes were uninspired and lacked the care one expects from a reputable establishment. The only thing that saved the pasta were the sauces, which were bursting with richness. The zucchini flowers were delightful & elegant whereas the flash-fried calamari entree was rubbery and overcooked. *Service Experience:* Service was inconsistent and far from attentive. The staff seemed to be merely going through the motions, contributing to an overall sense of laziness and complacency. *Overall Impression:* While the restaurants ambiance hints at tradition, the overall experience is one of tiredness and neglect. The culmination of our visit was the rude manner in which the bill was presented, with the EFTPOS machine practically thrown on the table, devoid of any inquiry about our dining experience. The arrogance of this establishment is palpable and off-putting. *Conclusion:* This restaurant is a relic resting on its laurels. It desperately needs a refresh. The front-of-house management needs a complete overhaul, and the kitchen could benefit from a stark reminder of the standards expected in inner-city dining. Tradition is valuable, but not at the expense of quality and genuine hospitality.

Pure Italian restaurant
Had very fond memories of dining at this place many years ago. Finally got organised to go again, and will be sure not to wait so long next time! Thoroughly enjoyed the experience with great food and excellent attentive but not in your face service. An awesome place for a business lunch or to catch up with old friends. A couple of hours went so quickly.
I ve always wanted to try Machiavelli, but my first visit left me very disappointed. Despite the good service, the food quality didn t match the high prices. The special vongole pasta had tiny clams/pipis that lacked flavor, and the pappardelle duck ragu came with bones, making it hard to enjoy. The green beans were bland, and most dishes were underseasoned. The only highlight was the dessert both the tiramisu and chocolate mousse were great but they weren t enough to justify the overall experience. Sadly, I won t be returning.
Food leaves much to be desired. Had special of the evening which was fettuccine with clams. Sauce was bland and pasta was severely overcooked, placed in the center of the plate where it stuck together. Overall, a disappointment and in my opinion, over priced.
I m extremely disappointed with my recent experience at Machiavelli, a restaurant I ve frequented for years, both for work and with family. Unfortunately, the food no longer meets the high standards I ve come to expect. The dishes were bland and lacked flavor, a far cry from the culinary delights I ve previously enjoyed. Additionally, the service, which was once a highlight, has become outdated and subpar. When we asked for wine recommendations, we were surprised to learn that there is no sommelier on staff. Considering the high prices, I expect a much better experience. Sadly, Machiavelli no longer delivers. 1/5 stars!

Dietary restrictions: I m sure there are limitations but they did ask if we had any restrictions. Parking: Only difficult if you re looking for a free spot! You might be lucky on the street close by otherwise a parking station is your best option. It public transport. Wheelchair accessibility: Yes, from the street.

Cant speak highly enough about this great city restaurant. When I mentioned to the boss that I was lactose intolerant, he kindly offered the choice of many dishes that would be prepared to suit my requirements. I chose Prawn Linguine and it was delicious and I found the staff to be very courteous. Good one!!

I was denied entry on a cold, rainy Wednesday night when the restaurant was more than half empty because we only wanted dessert and coffee. The manager even said Our desserts are very nice but we do not want to serve you. Im still in total awe of the situation. We were dressed nice and were super polite. Makes me ashamed to be a Sydneysider today.

The proscutio with melon was simple but delicious and freshly sliced. Followed by the confit of duck, again, delicious. We had the valipolicella ripasso which didnt disapoint.

The food and service were divine. Lived the array of photos/history on the walls and the cocktails were delivous. The only negative is, large round table and quiet loud... so being able to have conversations among the dinner party was very difficult.

Having heard so much about this place, I thought I d give it a go. I think I should have gone for one of their signature seafood dishes like spaghetti vongole because I ordered the duck and it was ok but not better than what bin would have got in a standard restaurant. At $50 it was a bit pricey for what it was, but nonetheless nice. The atmosphere would have been great if it wasn t for the huge portraits of politicians looking at you. The concept is a bit weird, and I personally don t find it appealing. Maybe other people like it. Service was great and elegant, and overall it s a quality establishment. Might try it again to give it another chance.

Wildly overpriced for the food served and the atmosphere in the restaurant. You are surrounded by enlarged pictures of politicians and other white men while you eat your food in the vast open space. Service was very slow to take orders/ payment and the bathrooms were awful especially for the price you re paying. Wouldn t visit again.

My wife and I were in Sydney to catch a cruise. We ate dinner at Machiavelli s the night before. The food was wonderful. The service was great. We ordered the Caprese salad. They make it fresh at a table In the restaurant. I took a picture of the young lady who made the salad. It turned out great. I posted it on their website.

I wasn t impressed for the taste of the food even if was not cheap at all. The location is also a bit strange , because is underground . the toilets are so old and doesn t match with the price we paid for the food. Also surcharging 10% for a table of six and 2% surcharge for credit cards payments. Would be nice with all those surcharges the food was better taste. Not impressed at all.

Is in a basement, so no views. Ambience is fine, but felt crowded with tables too close together. Food was good, nothing exceptional. But the price is ridiculous. 1 ravioli with about 12 pieces was $44

We celebrated our daughter birthday at Machiavelli on Saturday evening. The service, the atmosphere and of course the food was outstanding. The staff had the perfect blend of service without hovering, I never need to touch our bottle of excellent Italian wine the staff simply looked after that. The food was amazing, beautifully fresh ingredients professionally prepared and presented. Our daughter being a vegetarian can find her meals to be a little bland not so at Machiavelli her meal as every bit as tasty as ours were. A Sydney icon. The food is as good as ever. The papardelle duck ragu was a stand-out. The service was good but lacked real flair or engagement. And Id forgotten how noisy it is, with tiled floors. But, hey, its an icon!
Great Italian food and substantial servings. A bit on the rich side, though full of flavour. The homemade pasta makes a big difference to the texture of the tagliatelle. The atmosphere is surrounded by famous celebrity portraits of businessmen and politicians. Lots of deals are made in this underground restaurant. Service is outstanding and equivalent to a wedding reception.

We ve been dining at Machiavelli s for many years and our most recent experience exceeded our expectations in every way. The waiters were amazing and went out of their way to look after us. .For starters we enjoyed delicious zucchini flowers and calamari followed by traditional and authentic Italian parmagiana, saltimbocca, duck, homemade ravioli and fillet mignon cooked to perfection accompanied with a delicious peppercorn sauce. A must is their creamy mashed potato. It was so smooth and creamy -and leaves you craving for more. Dessert comprised of traditional tiramisu, raspberry gelato, affogato and crème brûlée. We left feeling very content, happy and full. It was the closest thing to dining in Italy and I highly recommend it.

The food and service were great unfortunately at the end of our time the ladies in our party of 6 were appalled at the condition of the bathrooms and unfortunately they only mentioned it to me on the drive home as I would have said something to the staff

Incredible pasta, homemade dissolve in your mouth quality. We had the gnocchi and ravioli both were amazing. The service was exceptional, and couldn t rate it highly enough, definitely worth paying a little extra for.
The staples aren t what they used to be the antipasto wasn t as vibrant and interesting (and already pre-prepared according to our waiter) and the Steak Diane is (a) no longer cooked in the restaurant, it comes from the kitchen (b) is far tougher and no longer the velvety soft meat it used to be; and (c) while still including the ingredients, the taste lacks the sweetness of the fried garlic and savouriness of Worcestershire it once had. While still an enjoyable dining experience, RIP to the pillars that held Machiavelli aloft.
Dinner was amazing. Every single dish ordered by our party of four was first class. Special mention goes to the steak ... it was perfection. Our waiter was fantastic.... nothing was too much trouble. We will definitely be back.

Absolutely incredible Italian restaurant. I came here last night for my Wife s birthday and everything was outstanding. The food was brilliant. I love pesto pasta and I asked our wonderful waiter if the chefs could make it as it wasn t on the menu and they did. It was spectacular!!!! I haven t had pasta like that since I was in Italy. We were served by Davida a lovely Italian man from Sardinia who made sure my Wife was looked after in every way. My wife is pregnant so she wanted a Mocktail that again wasn t on the Menu and Davida made sure she got something yummy. Machiavelli is slightly more expensive than most Italian restaurants, however this is completely justified as the presentation of the food, service and taste is clearly a cut above the rest. I have been all over the world and this has to be one of the best dining experiences I have ever had. Davida was a brilliant waiter that was thoughtful, caring and completely assertive making sure we had a wonderful time. I thanked our Chefs as we left and they were too lovely gentlemen. My husband and I visited Sydney recently and this restaurant did not disappoint with a traditional feel but also very refined. The waiting staff were excellent and knowledgeable and the food and drinks were promptly served. We had the zucchini flowers as starter and it was delicious. I had the Tagliatelle Machiavelli (pasta made in house) which was the best pasta I have ever eaten and my husband had a seafood pasta from the Specials board which was equally amazing. Will definitely go back next time in Sydney.
First restaurant to visit when back in Sydney. Pasta here is delicious. It doesnt quite seem to be at the level when run by the old guard, but still really good. Smooth gnocchi in flavoursome cheese sauce, unbelievable seafood broth pasta, and a sweet spanner crab pasta. The minute steak wasnt to the level for the price, and I miss the zabaglione that used to be made at the table ... But it is all about the pasta here for me now. Professional waiters and crisp linen. I like the crew of Italians working with engagement for this stylish restaurant. The food was fresh and delicious. We could share some dishes, we highly appreciated. The skin of the ravioli was thin, the salade colorful with a nice selection of vegetables, even avocados.The fried calamari were tender and my rack of lamb on a layer of creamed and grilled vegetables just perfect. We also enjoyed the Vermentino from Sardegna. We finished our experience in Machiavelli with some chocoletti, croccanti, limoncello et Café. Grazie mille per questa serata! Lovely overall it was my mum s birthday and my family ended up arriving late but they were very kind to let me sit at the table and wait for them before ordering and gave us very good service when they arrived. Apologies for being the last to leave and holding the restaurant open for longer than it should have been!! We hope to return
Simple dishes made with good quality ingredients is the key to great Italian food and this restaurant delivers. Duck ragú was amazing. I will return if I visit Sydney again
Had a dinner with a large group of us for my birthday. We were running late due to some issues and the staff were so understanding and lovely about it. The staff were so accommodating, sweet and funny! We all had a few different drinks and pastas and we all were in awe! I had the Napoletana gnocchi and it was the most beautiful gnocchi I ve had in my life honestly. Would 100% recommend to anyone thinking of going!

High class food and service. The waiting staff were particularly outstanding, friendly and attentive. The food lived up to expectations and was authentically Italian. The place was noisy but to be expected for the size and popularity of this restaurant. All in all a great way to celebrate a special occasion. Highly recommend.

I had not been to my favourite old haunt for some time. My next visit will be a lot sooner. The food, atmosphere & service were all outstanding. My 3 guests who not been there before. All enjoyed experiencing the wonderful delights of Machiavelli.
I ordered the filetto di manzo and it was delicious - the portion was spot on and it was cooked exactly as requested. The tiramisu wasnt quite traditional but still very tasty. Overall the service was outstanding and I would recommend this place for a lunch or dinner on a special occasion.

We had lunch here last week and the food and service was excellent. Our large table was accommodated away form other diners as we knew we would be noisy and also we wanted some privacy , this was all considered and it was a perfect spot. I loved the entrees and the main course of Snapper was delicious. Parking: not sure

This small and well constructed menu was simply delicious. From the freshly cut prosciutto to the affogado I cannot recommend this restaurant highly enough.

We had our Christmas party and it was excellent. The food was amazing.
Fabulous food and service. Everyones food was outstanding. Service was pleasant and very efficient. Disappointed that i made the point, when booking, that it was our post elopement dinner for just 4 of us and we were seated very close to a very large, loud table. It made our experience less enjoyable and the wait staff told us they werent busy. Obviously no one had read the detail because staff werent aware of the special occasion. Such a shame when i couldve been perfect.
I, John Exner, went there in early December, for lunch with my brother, Tom. I approached a huddle of waiters at the service desk. The owner, as it turned out, stepped forward and I advised him of my reservation. He pointed me to a (good) table by the wall, under a large photo of the Murdochs, where Tom was already sitting. This is the first time in my 83 years that, in a superior restaurant, I have not been shown to my table. And I, being on a walking stick, would have benefitted from having a chair pulled out and placed under me. But what the heck...it turned out to be a pretty blokey place, so I wont stand on formality. There was already a bread roll at my plate. Tom had already eaten his. We were offered Italian sparkling water. I ordered the saltimbocca and Tom, the John Dory. The wine list is vast so we went with the waiters recommendation for a bottle of an Italian white for $120. It was early in the service and I was interested, looking around, as the place filled up. Ultimately, there were only two vacant tables in what is a large dining area. I was intrigued by the large central table with electric slicing machine (for the prosciutto) where the antipasti were assembled. Nearly all the diners were businessmen. It was pretty loud. I have never seen so many waiters work so hard. My saltimbocca did not jump in my mouth. Tom did much better. With two deserts and tip, it came to about $260. Worth the experience.
