Flawless ambiance in a comfortably elegant but unstuffy room, some of the best and most engaging service you will encounter anywhere, and exceptional elevated, imaginative fusion cuisine. I'm so glad we were able to enjoy another evening at the Chef's table with the same guests and the same wonderful chef and sommelier. Despite prejudices the neighbourhood might have imposed, this place is more deserving of Michelin recognition than a number of others we've visited.

Overall the best part of tonight’s dinning is the exceptional attentive service we got from our server Brandon. When we walk in we are greeted with happy birthday! The complimentary soup is very salty and not quite drinkable to both of us. We ask for low sodium and they listen and deliver. However almost all dishes have used a lot of citrus and I feel stomachache after dinner. The beef tartare is a bit chewy. The yuzu sauce for the sablefish with capers is very sour and we don’t feel it complement the fish. I personally feel the food is only 3 star on the tasty menu. Might be the À la carte would offer a different experience.

5/5 - Outstanding Elegant construction, creative use of simple ingredients that elevate them to mouthwatering eye rolling status, relaxed pacing, modest but ample portioning. Checks all my boxes. Particular favorites: The japanese sweet potato was to die for perfect carmalization and crunch on the outside. The red wine burdock root i am going to have to try to replicate at home. >.< so so so good. The beef tartare matched with the Asian pear was a match made in heaven, and I loved the play with taste, texture, and moisture. Just under 100 cad for the tasting menus, but you won't regret it one bit. A culinary journey and the service were super friendly. You could tell they were proud of their dishes, and for good reason! Make this place a priority if you have not been yet! It's worth a drive, a must try if you're in the area.

Wonderful place to try on an impromptu getaway to Vancouver. We did the tasting menu, and loved the flavors of the miso cured sablefish especially. The roasted pear for dessert was also a highlight. The owner explained several of the dishes and the sake menu to us, and was a delight to talk to.

My first visit to this restaurant was back in 2018 with my boyfriend, and we indulged in the foie gras bowl. It was absolutely divine. Fast forward to today, October 22, 2024, and I returned with a friend. I’m happy to report that the dish is just as exquisite as I remember. The flavors remain consistently delightful, and given the quality, the pricing is more than fair. This time, I also tried a cocktail called Bloom, recommended by our server, and it was incredible. couldn’t resist ordering a second one! Overall, this place remains a gem, and I’ll definitely be coming back. Highly recommend 9.5/10!

This restaurant was on my friend's bucket list to try. The service was excellent, and we ordered the tasting menu. The server came, explained every dish, and changed our plate and cutlery after every course. Some of the courses were interesting, with a combination of ingredients used. Some dishes were better than others. Overall, i would recommend giving it a try.

Good experience, but not amazing. Lots of unique dishes, some of which were great and others not to our taste. The drinks were unique but didnt rival other Michelin restaurants weve gone to. The atmosphere was oddly casual, people on their laptops doing office work and wearing crocs right beside us- for an upscale Michelin recommend restaurant I thought this was odd and didnt lend itself to a great dining atmosphere. Service was nice, staff were great.

We absolutely loved the warm and welcoming atmosphere of this restaurant, which made our experience even more enjoyable. The service was impeccable, with two gentlemen who were extremely friendly and attentive. The food was simply delicious. We chose several dishes à la carte to taste a variety of flavors, and each dish was a real delight. A special mention goes to the beignet, which was bold and full of surprises, adding a unique touch to our meal. It was a culinary experience we d be thrilled to repeat !

I wanted to love this place, but it was a major flop. We were 2 and did the tasting menu which started with a savoury shot that unfortunately didn t sit well with our taste buds. The atmosphere was flat; the low music only highlighted the lack of conversation in the nearly empty room. We left hungry and went for pizza afterward. While the duck (last course) was really tasty, the portion sizes and taste didn t justify the price.

Once I saw two people on a date and when the dude went to the bathroom the waiter had the audacity to ask for the lady s number and hit on her. Straight disrespectful and unprofessional. Great service, the owner shared stories of the restaurant and kitchen staff and spoke about the ingredients and process. The dishes were inventive but still satisfying and delicious. This was haute cuisine but not an experimental stab in the dark, there was enough in each plate to taste and savor. We will definitely return on our next visits to Vancouver. I gave it a 4 for atmosphere primarily because of the neighborhood, but don t be put off by the sometimes sketchy street scene in gastown.

CELIAC FRIENDLY! I wanted to do a fancy meal somewhere with a set menu and drink pairings for my birthday. My partner, however, has celiac, and anyone with celiac knows how hard it is to find a set menu option anywhere. I emailed Pidgin to see if they could accommodate and they called me within 45 minutes, were incredibly sweet and welcoming and said it would be no problem at all to modify my partner s tasting menu to remove the gluten. When we got there, they didn t even need to think twice the servers already know the modifications they ll make to make the menu gluten free, and it s only about 3 small changes. You get the exact same experience. The staff are incredibly nice, the food was great and the experience made us feel so safe and secure that my partner wasn t going to get glutened. Thanks so much to everyone at pidgin for a great birthday dinner!

Pidgin .. where to begin. We were a party of 10 celebrating a birthday and decided to go here, given all the raving reviews and positive experiences seemingly across the board. What we experienced was unfortunately not what we expected. Admittedly booking a large table for 10 on the night of Messi possibly showing up at BC place meant we each arrived at various times past the 7pm reservation. The restaurant had graciously allowed us to trickle in (thank you). But then for some reason we were told we HAVE to order the tasting menu (we didn t ask for a recommendation of what to order) and they said it enough times to almost convince us until they coughed up that it was only strongly recommended after we asked a few times why? I m not sure if this was a joke or a strange sales tactic but it put half our party off from ordering said tasting menu. No where on their website or menu does it state that it was mandatory that everyone needs to order the tasting menu. We expressed that although we understood that this was a sharing style dining place, due to the number of people in our party and being that a couple of the girls had some dietary restrictions, sharing plates was not favoured among us. A few went with the tasting menu and the rest of us ordered a la carte (you can order the tasting menu individually as well at market price). Maybe I missed the explanation (if there was one given?) but didn t know that the dishes come out in the order of the menu. ie if you ordered the quail like I did (which is further down on the menu), you won t see your food in front of you until much later. The food itself tasted great (although rather sinewy) - but what food isn t when you have waited almost 2 hours for it to get to you? We ordered by 8pm and left at 11:30pm. This is an astronomically long time to dine, even by fine dining standards. I m not a food critic, and certainly you might not give much thought to my review, it s likely buried in all the glowing reviews above and below, but I had soaring expectations for a Michelin guide restaurant (as I would with any Michelin recommendation). It is sad that our first experience here was less than. Perhaps a culmination of multiple factors but we did not feel welcome here. Service for us was not exceptional and we felt forgotten. We kept waiting for the incredible dining experience everyone else is talking about. The other parties here for date night and as smaller groups looked like they were having a blast and I think that is the way to go to fully enjoy the dining experience here.

Went there for dinner last night with a party of 9. We had to get their set menu because we were over 6 ppl. The menu was $90 per person. I don t understand how each dish can be so salty, vinegary and so bland at the same time. The food was imbalanced and sub par. Service was slow, each dish took over 20 mins to come out. We got there for 8 and left at 11:30. Not to mention, there s a mandatory 20% tip added for the large group, which is standard but hard to swallow when the meal and service is so disappointing.

They were willing to create a hybrid menu between the two tasting menus to accommodate my pescatarian diet plus food allergies, which was a pleasant surprise and very much appreciated. Went with a group of friends and did the tasting menu with wine/sake pairing. While all courses (but the dessert) were amazing, the portions were ridiculously small. We left still hungry and some of us went for a second dinner. Considering the tasting menu is almost 100 dollars, one would expect the portions to be somehow decent instead of being 2-3 bites each. The service was also a bit slow. I would recommend the restaurant for the food quality for sure, but price or portion adjustments are definitely needed.

Nothing but great things to share about the gem of a restaurant, Pidgin. A few of the dishes they offer are phenomenal, including the foie gras rice bowl and chicken wings. Each dish is great though. The staff were attentive even though they were busy with several tasks at times. For dessert, their beignets were the standout that really highlighted their skills in combining ingredients from cuisines of different cultures really well. A must visit! Vegetarian options: They have a few vegetarian options, though the vast majority of their dishes contain meat.

A group dinner tonight was made so memorable by the outstanding team here, our whole trip was enhanced by the experience! The tasting menu (including the wine/sake pairing) was an exceptional choice, and the knowledge of our server Harrison heightened the whole experience tenfold. The atmosphere was warm and comfortable, with a clear undertone of sophistication. The evening was perfect from start to finish, and the whole group can t wait to come back for another visit! We also highly recommend purchasing (or at the very least checking out) the surrealistic fairytale, Fishes & Wishes, they have on display! Three out of five of us took one home because of how impactful it was! Vegetarian options: One of the people in our group got the vegetarian tasting menu and it was wonderful!

We had a beautiful time at PiDGiN. It was our first time and our service was impressive. First time having some ingredients and they did not disappoint! We had the tasting menu and it was incredible. My partner has a shellfish allergy and he was treated with the utmost care. I would easily recommend this restaurant and return again. Our server was attentive and very good at his job. As an avid food enthusiast, the news that this restaurant had been honored with the prestigious Bib Gourmand award filled me with excitement and anticipation. However, my experience, in the end, left me with mixed feelings. The tasting menu, while showcasing culinary ambition, fell short in certain aspects. The culinary journey kicked off with a fish on toast featuring Madai, one of my favorite fishes. Unfortunately, the promised aging and flavor of the kelp failed to make an impression. The dish lacked seasoning, appearing bland and leaving me yearning for the expected depth of flavors. Despite their admirable effort in crafting their own brioche, it arrived at the table with a stale undertone, as if it had been prepared days prior. The second course, a celeriac salad, proved to be monotonous and uninspiring. However, the pickled celeriac added a much-needed burst of flavor, rescuing the dish from complete dullness. Moving on to the seasonal tempura, the choice of vegetables was commendable, but the ginger slices were a bit too thick for my liking. The sauce at the bottom failed to impress, and a classic ten-tsuyu or flavored salt might have been a safer choice. The fourth dish, a foie duo, suffered from a lack of cohesion. The transition from hot tempura to cold foie gras felt disjointed. While each element was well-executed individually, the overpowering unagi sauce dominated the palate, overshadowing the intricate flavors of the other components. Transitioning to warm dishes, the fish showcased excellent cooking skills, but the creamy sauce was not to my liking. A dashi-mushroom consommé would have been a preferable alternative, as the lotus roots added an unwelcome level of saltiness. The standout of the evening was the duck, impeccably cooked and bursting with flavor. However, I wished for more Japanese influences, similar to the previous dishes, to maintain thematic consistency. The dessert, a bavarois, left much to be desired. The cream was broken, and the texture resembled scrambled eggs rather than the smooth consistency one would expect. This unfortunate misstep marked the end of an uneven culinary journey. In conclusion, while the restaurant exhibited ambition and skill in various aspects, the overall experience fell short of justifying the high cost. The lack of thematic consistency, underseasoned dishes, and flawed dessert left me with a sense of disappointment. Despite the Bib Gourmand accolade, this particular culinary adventure did not live up to my expectations.

Honestly pretty disappointing experience. We had a few different table staff and props to most of them. They were fun and friendly. But the food and overall experience left a lot to be desired. Been twice now and was hoping this would be the redemption. Its just okay. Certainly not worth the price and not worth dealing with where its located. The food was okay at best. It wasnt bad but it was very underwhelming. Many core simple elements either under (Bok Choy) or over cooked (Carrots). The main duck was underwhelming, a small portion even by fine dining standards, and honestly a lot of the meal just felt like something that could be prepared at home if you wanted to spend the time. At half the price I could recommend, but its really punching above its weight class with prices. It isnt bad food but it does not deliver on the total package its selling unfortunately. Additionally any sense of atmosphere was ruined by the staff allowing this insanely selfish woman blind everyone in the tiny mood lit restaurant with her portable light as she pretended to be some kind of food blogger, which she was clearly not. I couldnt believe staff served her while she had this powered on in her hands. Absolutely hilarious. This was really the cherry on the mediocre cake. It was an incredibly funny scene as half the restaurant constantly moaned and recoiled every time a dish was served to her table and she dawned her portable sun to record her meal and ruin everyone elses. Peak Vancouver. Ridiculously obnoxious and underwhelming experience from a place that apparently won a bib since the the last time we tried it.

Initial impressions of the first three courses - they were flavorful but on the smaller side. However the latter half of tasting menu definitely redeemed itself with bigger portions and of course, they were delicious. Our server, James was amazing and cared enough to make sure we walked away full and included an extra dish for us. He was knowledgeable, friendly, and attentive throughout the evening. It was cold and had a stale texture. I wish it was crispy. The fish and uni were fine. Celeriac salad: I felt that the buttermilk dressing was too heavy. Tempura: it was good. Light and crispy batter. Tempura ginger was unique as well. Soba noodles: the flavours were nice but I wish it was served cold. I think the yuzu would have shined better if the broth was cold. Prosciutto wrapped sturgeon: sturgeon was slightly overcooked. The prosciutto overpowered the delicate sturgeon flavour and took away from the overall dish. I wish the prosciutto was completely removed from the dish. I did like the lentil in fish sauce. Duck breast: gnocchi was great. Duck was ok. Vanilla bavarois: favourite part of the course. Had a refreshing and bright flavour profile. The lime and melon really elevated the dish. It was served cold and that worked great. Service was excellent. I got a non alcoholic cocktail called sensible spritz which was nice.

We ve been wanting to dine at PidGin for a long time, finally had the excuse of a birthday and came here to celebrate. No need to look any further than the seasonal, always changing tasting menu: it s incredibly good, based around the best of local products and excellent value. Not a single course missed the mark: to single out any as favourites in no way suggests the others were lacking: each course was designed to build the progression of the meal while being able to stand on its own merits. That said: the dish with the braised lentils was OUTSTANDING: sure there was some perfectly cooked sturgeon sitting on top, with some lovely sautéed greens, but the lentils OMG: braised with butter, mirepoix, red wine and a stock that tastes like it was days in the making with a depth of flavour that is the hallmark of a skilled chef: just ladle me up a bowl of that and walk away from the slurping noises . Can t overlook the soba noodles and mushroom dish either: it hit my partner s #2 ranking after the lentils: rich and nutty and full of earthy nuances. But we were also treated with a surprise extra of the rice cakes with gochujang bolognese: I had read about this dish before and it is as good as the rave reviews say: one of those dishes that just can t ever leave the menu this one took my #2 spot. Even so, there were a lot of comments along the line of what about .the fish toast: uni, a gorgeous compressed, citrusy snapper, a perfect bite. Or the celeriac sonata that followed and the tempura: who knew that a piece of ginger, battered and sprinkled with flaky salt, could be so good? And the duck dish, which as my partner said, fantastic but just not quite as fantastic as those lentils, sorry! We finished up with a dessert pair - again they treated us to a little extra: a lovely light custard that had my partner wanting to shamelessly lick the cup out, and then a perfect beignet with Szechuan pink pepper and a beautiful miso caramel. Onto the service: we lucked out and had Jordan, who is one of the sommeliers (WSET wine AND sake) who curated the drink pairings for us this evening. Do just put yourself in these skilled hands if you can: the wine pairings were excellent, diverse and perfectly matched to their respective courses, but the sake pairings were even more nuanced and truly elevated the food as they should. If you haven t had the pleasure of an expertly guided sake flight or pairing then you should try it as soon as you can: good sake matched well makes the food sing. Service was personal, warm, and quietly impeccable: the courses were timed perfectly, we had time to enjoy each dish but never felt like we waited at all for the next one. Descriptions of each course were interesting, detailed yet concise. Also a nod to the kitchen team: a shellfish allergy that can often be a nuisance with a tasting menu was handled without so much as a hiccup: a quick substitution on one course and a condiment served on the side for another was done without fuss. So refreshing compared to the places that pretty much roll their eyes when you request them to work around a genuine allergy...nothing says happy birthday like a side of epinephrine. Definitely have to give top marks to Jordan though who was really a big part of making it such a lovely evening: attentive service without being stuffy or hovering. Michelin has listed this restaurant and I expect that soon we will see another red star added to the Vancouver listings. But more to the point, we will be back as soon as we can to see what s in season, and we already have the list of friends who we know will enjoy this lovely experience as much as we did. Vegetarian options: Full vegetarian option offered - again without making the veggie person feeling like they got short changed in any way. Dietary restrictions: A shellfish allergy was handled safely without fuss and without making us feel awkward for even having to ask. So nice for a change!

Worst service I ve ever had. Went in may 2023 with coworkers. At the time I was pregnant but too early to announce at work. I tried to talk to the waiter when he came to greet us before the rest or the group arrived and he waved me off saying he would take dietary restrictions when he explains the menu to the whole table. Then I stood up to go see him and explain again that I needed this to be a little discreet, and he was again not attentive and condescending. For the whole meal he proceeded to calling out loudly all the dishes that were non raw alternatives and here is your non alcoholic cocktail every time he would bring something for me to the table. The alternative dishes to the tasting menu were very disappointing too. He was just rude and condescending altogether, not just to me. Worst experience and do not recommend.

PiDGiN (Gastown) Food and service was fantastic! Yes I would definitely come here again =). Below is what we ordered in order of what I thought was the most delicious: STUFFED FERMENTED CABBAGE $20 compressed mutsu apple, enoki mushrooms, almond and miso glaze. WOW!!!! I honestly would have never chose this dish but was recommended by our server. Im so glad I did because if I were to come back, I would 100% order this again! I was SHOCKED how delicious this was. FOIE GRAS RICE BOWL $37 chestnuts, daikon, unagi glaze. This was superb. Really loved the flavor of it all! I would get this or the Pork Belly Rice bowl next time! CHICKEN WINGS $17 gochujung sauce, tosazu pickle daikon. These were pretty good, nice and meaty and crispy! But are they best chicken wings ive ever had? Noooo, but they are still pretty good! PROSCIUTTO WRAPPED STURGEON $40 lentils, braised beans, garlic koji, red wine butter sauce. Ok out of all 4 dishes, this was the only one I didnt like at all. Suprised because this was the most expensive one! The fish just tasted dry and not flavourful at all. Yes the beans/lentils was good, but not the fish. Very disappointed by this one. Sablefish from other restaurants is probably 100x better than this one!

We are careful with our sugar intake and would normally not go to a place that serves rice bowls. But my friend wanted to try this place, so we obliged. PiDGin is located at a challenging part of gastown for both car and foot traffic. Fortunately, the gas town crowd the street were more concerned with each other than looking out for tourists. Not having done much research on the menu, I was surprised when my friend selected Beef Tendon Chicharron. As none of us paid attention to the complete name of the dish, we all expected chewy jelly-like pieces of collagen. What came were pieces of super light puffs that looks more like pork rind, but tasted a lot lighter. This dish was made from roasted tendons, sliced, dried and then deep fried, sprinkled with spices. The beauty of Asian/Chinese food is in the variety of vegetables. But Pidgin only offer stuffed fermented cabbage which the folk at at our table rejected. So we ended up with a really unbalanced meal of protein and lots of carbs (sugar). Our healthy diet went out the window with that. We also ordered Chicken Wings and Agedashi Tofu. Since none of us want a plate of beef, a couple of us chose rice bowl: pork belly rice bowl, foie gras rice bowl, sablefish. The flavours of my pork belly was good, and the rice firm. But I would normally not order white rice, so I felt I had eaten unhealthily. At the end of the meal, we were all quite disappointed. I went home with CRS (Chinese Restaurant Syndrome) the taste of MSG (or seaweed) stayed with me all night. Im really not sure how genuinely Asian the menu can be without a healthy selection of fresh vegetables. Overall, I would give 4-stars for the pork belly, minus 1-star for lack of vegetables, and minus 1-star the CRS I suffered afterwards.

Ive visited pidgin before the pandemic and that was a wonderful time, attentive service, great wine selection and a rotating tasting menu. This time, I visited with friends and I think theyve done a great job of showcasing a wide variety of flavours, textures and techniques for the winter 2023 tasting menu. The tables favourite was the matsutake chawanmushi with its delicate pudding like texture and saltiness of the fish roe. The Hokkaido scallop was the second favourite with a great balance of acidity to compliment the meatiness of the scallops. Cream sauce was perfect and wish I had some noodles to soak up the rest.

Very very good experience! Go have diner here! Amazing knowledgeable staff, all ingredients and the wines were perfectly described. Furthermore the food was perfectly prepared. Nonetheless price wise it is definitely not comparable to Europe in terms of value for money, but you have to keep in mind that you are on the other side of the world with certain ingredients not readily available. Wine / sake / cocktail pairing is highly recommended! Beautiful pairing actually adding value to the dishes presented! I think I even can say that it has been the best pairing I ve had since ages. (Always a miss in the menu but here it was flawless!!) All in all: a definite go for this restaurant and it s staff. Amazing!

Consistently unremarkable food, with attentive and considerate service. We had the tasting menu with a few extras. The opening salad was light and refreshing but nothing noteworthy. The chawanmushi was served too hot, I would have preferred it rested, and was also runnier than I ve had before. The soft shell crab and wings were tasty, but in a deep fried way rather than any unique flavour or technique. The bison meat was bland and I didn t enjoy the powdery texture either but perhaps that s just the animal. The mousse to me was confused with a bold dark chocolate flavour dominating the lighter lychee and berries, I think a vanilla or milk base would have worked better. I would argue disappointing execution of pan Asian, with few dishes creative in isolation, and French techniques generally went unnoticed except for in two mains Service was excellent.

It s a Michelin recommended restaurant and it s easy to see why. It s a great fusion of Asian and western cuisine and all the dishes were carefully curated. We had the tasting menu and a virgin cocktail and it s not for a full meal - it s only to highlight the dishes and the restaurant. If you order separate dishes, I highly recommend the scallop and bison dish! It can be a bit pricy but I think it s worth the price and the wait based on my experience.

I came in for the Valentines tasting menu, got quite disappointed for the $165 per person menu - 6 appetizer portioned dishes for two to share. It could be subjective but I m only 100lb and I ended up leaving the restaurant feeling hungry :( The space was super crowded almost felt like eating at a ramen bar. food taste good but the menu was not very well designed - its just too heavy with cheap ingredients: heavy cream based soup, overly buttered risotto, salty bacon risotto and thick creamy dessert. I ve been to many fine dinings, not very impressed with the overall food quality and ambiance.

This excellent Gastown restaurant lived up to its great reviews and was definitely one of the best meals we had while traveling in Canada. The cuisine was inventive and delicious, with a distinct Asian influence. My spouse and I shared the tuna tartare, chicken wings, truffle risotto and smoked magret of duck. The service was very good; the restaurant worked around our dietary restrictions (we have many). Everything was nicely plated. Ingredients were great; it was clear. However, none of the dishes blew our minds. I think this is the main issue with Pidgin. Overall, tasted blandly. For example, halibut was fresh and nicely cooked, but missing some citrusy flavor. Quantity-wise, I think our server explained well at the beginning - won t feel hungry or full . However, my personal expectation is that when I get a tasting menu, I should not think whether I should eat more afterwards. Adjusting the quantity of the last course before the desert can fix this easily.

We did the tasting menu chefs table experience when we visited, which I would skip if I were to go again. There was an interesting juxtaposition between the food served and the setting/location (in a not great area of town, casual tone), one that Im not sure I truly enjoyed. I also did not care for the family style service with the tasting menus. I admit that I was still hungry when I left. Okay, all that aside, the food was beautiful and delicious. I would recommend doing ala cart and getting a couple things that look interesting vs the tasting menus. They also have wonderful vegetarian options, though could use more protein. Our server was wonderful and the interactions between the chef and his staff was really cool to see, it looked like they were having a good time. Overall, I was mildly disappointed that reality didnt meet my expectations, but it was still a very nice dinner with great service.

UPDATE 7/25 - Out of fairness to the restaurant, they reached out after this review and did a deep dive into our experience. I really appreciated the follow up. Management made a serious effort to figure out what happened and why the service was so poor. Although I stand by the review since that was our experience, I genuinely expect that the feedback was taken to heart. We will be giving Pidgin another shot when we are back in Vancouver. Don t go here. This isn t fine dining. This isn t elevated service. We paid for the chef s table experience which sounded like a nice way to celebrate an anniversary. Just to cut to the chase We sat without any sort of acknowledgement or explanation for no food for 15+ minutes on 3 different occasions. We were without water for 20 minutes. We had an initial round of drinks, and, when the server cleared my wife s sake glass, there wasn t any sort of want anything else? On top of that, the chef never even acknowledged us there! I don t expect to have a sit down, but just a wave or a head nod maybe? This wasn t inviting service. It felt like we were a nuisance here. The cost for the dinner was 250 CAD. Michelin star? Please. There are hundreds of better spots in Vancouver. I genuinely want a refund. This is unacceptable.

It was a nice place to eat. We tried various options off the menu and no one item was better or worse than the other. The drinks were really good unlike some places where you question if any alcohol is in them. I would def recommend trying at least once. We went there for a chefs table experience despite a negative review on this experience recently. I do think they took in the feedback...because we had a phenomenal experience. Its impressive what they are able to create from a tiny kitchen. I definitely recommend the sake/wine pairing. We discovered some new types of sake and wine that we have not had before. The hostess took her time explaining each dish and wine. And coming from NY the price for the quality of meal and experience felt very reasonable!

Tasting menu was really well executed and was filling and delicious. Staff were kind, thoughtful, knowledgeable, and thorough in their presentation of each dish. Dishes were paced slowly which gave us plenty of time to chat and sip wine, which we loved. Only downside is the neighborhood, we made the mistake of walking from downtown and regretted it. Worse than 3rd and pine in Seattle. Would recommend getting a ride to and from dinner instead of walking.

We came here with pretty high expectations after hearing about it a few times. To be on the safe side, we tried the tasting menu and there s no way it s worth the value, not even close. Everything was very basic, made out of cheap ingredients, came in the tiniest portions that left us hungry after spending over $250 for 2 people. That s the most disappointing part. Bonus disappointing part: no plating skills whatsoever, as a foodie, I take food pictures all the time but really didn t want to take any pictures of the food that we were served here . See it for yourself 1. A5 Wagyu - tiny, bite size portions the size of my pinky finger (no joke). A bit salty 2. Tomato salad - ok let s face it but this dish probably cost $5. The menu makes it sound fancy but it s literally slices of tomatoes and lettuce, nothing more. I could honestly put together a better tomato salad dish that would look more presentable. Yikes 3. Octopus carpaccio - no comments. Had this very smoky taste but our expectations were already pretty low after the tomato salad . Lol 4. Mushroom tempura - another bite size dish that I could easily make at home for less than $10 and better plating too. Yikes 2x 5. Sockeye - nothing more than plain sockeye skin on. The kind anyone can make at home in the oven after a long day at work 6. Pork rack - probably the best and most filling dish if I m being generous? But nothing mind blowing to be fair 7. Pavlova - probably the most beautifully presented/ plates? Can t complain but again, pavlovas are really just egg whites and sugar . So yeah, we won t be going back. You can totally make all of the dishes yourself at home for 20% of the price Or go to Collective Goods . Or Straight & Marrow (much better value guaranteed!)

TLDR: high hopes but lacking in strong distinct flavors in many dishes, wouldn t return Service was pleasant and nice enough for a higher end establishment. We ordered two of the tasting menus and thought that seven courses would get us close to full it definitely did not even with a free soup course as an eighth. Only hits were the duck which was cooked very well and the dessert which lacked in presentation but hit home in flavors. The toast that came with it was very much a dry piece of cold bread that covered any flavor that the uni and fish could have had, is it still toast if it is served cold? The salad portion was so small that I wonder how small it would be if only one person was served? The soba noodles with truffle was just way too salty and one forkful of noodles later it was gone All in all, very forgettable tasting that I would not come back for.

Not particularly against cooking meat by sous vide, but their protein just lacked taste and substance. Been there twice and both times I felt disappointed by the meat entree dishes. Apps were great and they probably have some of the best sauces in the restaurant scene (they make up for their underwhelming meat). Lovely people and great atmosphere.

Been a minute pidgen. Our restaurant club last dined here at a collab dinner with Galiano s Pilgrimme in 2018 so we thought it would be a great choice for our annual xmas dinner. The tasting menu was extensive, and texture was the focus: from warming truffle soba to crispy tempura ginger to creamy finger lime bavarois, this meal was the epitome of winter kokumi. Pacific Northwest ingredients with Japanese elements were key to most of the courses. The fish on toast was a fun, approachable, and beautiful amuse dotted with Hokkaido uni and cured snapper and the sturgeon was also a highlight.

A little pricey for the portion size, but delicious nonetheless. We opted to order a la carte in order to try more dishes and enjoyed every one we ordered. The ingredients were well chosen and very tasty, you could tell that the chef thought about each dish and wasn t trying to throw a bunch of ingredients/flavors that only sounded good together (which I find happens commonly with Asian fusion). The service and atmosphere was wonderful, and we will definitely return to try their new menus!

JUST WOW! What an experience! PiDGiN has been on my list for a few years now and I finally got to give it a try last night! Everything was top-notch; customer service, ambiance, drinks, food, attention to details! The flavours were so complex and well balanced. We ordered two small dishes (smoked octopus and chicken wings), two larger ones (escargot risotto with truffle and pork belly rice bowl) and two desserts (chocolate cake and beignet) So soooo sooooo good! The highlights for me were the chicken wings and risotto but everything was so tasty! The drinks (both alcoholic and zero proof) were absolutely great as well! Also, the most interesting flavour was their szechuan pepper beignet!! I think it was the most surprising dessert I ve ever had in my life! Overall, what a treat! Definitely one of my top 3 restaurants in town, if not THE top!
